How about buttercream or ganache with mint extract added? If you want green colour, you could always add it in there too. Sounds yummy already!

The peppermint buttercream that goes with the candy cane cookies on the cover of the December Bon Appetit is fabulous. I don't think I'd make those cookies again, but the buttercream is a definite repeater! (recipe is available on epicurious).

Well, I ended up making a mock vanilla mousse, coloring it green, and adding peppermint oil to it. Made a nice, smooth gentle mint filling.
