So last night I rolled out some beautifully thin, wide spinach pasta dough for lasagne. They're 13 inches long and almost six inches wide. I, like an idiot, cooked all of the dough though it was obvious that I'd only need half of it.

So now I have four beautifully thin, bright green, enormous sheets of cooked pasta oiled and rolled in damp paper towels sitting in my fridge.

Is there anything interesting to be done here? I was thinking pasta chips, or maybe folding them into boxes and baking crisp...but I'm sure others will have better ideas. If worse comes to worse, I'll make manicotti or something.

Cut them into smaller ribbons and toast in a saute pan with EVOO, s, p. Top with a robust sauce, preferably a duck ragu.

You can make interesting cold lasagna roll-ups with them--perhaps with some ricotta from the farm market blended with whatever herbs sound good to you. If you cut them into little spirals they can make a great snack or summery lunch.

A cold sweet fruity noodle pudding, like a Kugel...

Sweet Ricotta, raisins, pineapple, cinnamon, nutmeg, vanilla...

Folded up into multi layers, refrigerated, cut into fun squares...

Ooooooh!

Mmmmmm... pasta pie. Cut into thinner strips, mix with some favored incgredients (veggies or meats and some cheese), stir in some beaten egg and top with buttered bread crumbs. Bake it in a pie dish and cut in wedges to serve.

I ended up cutting them into 1.5"x1.5" squares, generously oiling them, loading 'em up with parmesan and cracked pepper and baking them till they were crackly and dry. Actually a pretty delicious snack - a big stockpile in the freezer and some on my desk right now.
