Why is it OK to eat chicken liver medium rare, but not chicken breasts?

Not only that it will eliminate food borne illnesses, It will also solve world hunger. 1/3 of food produced goes to waste.

 

Love to be able to eat pork sushi or chicken sushi.

Yup.  Crazy world where the uninformed protesters essentially block a life-saving technique from being put into general use.  According to CDC 3000 die/year from food- borne illness  http://www.cdc.gov/foodborneburden/

Really? You sure about beef being so acidic that bugs don't grow?  If bugs don't grow in unspoiled meat, what is it that spoils the meat then?

 

I'd imagine that the pH of meat is near the blood pH which is about 7.4 in people.

 

They can still reproduce, but the meat is out of the optimum growth range for the bacteria we worry about. Chemical reactions in the meat after slaughter drop it down to around 5.5 very quickly. Over time it creeps back towards neutral, so eventually the bugs can go to work. You still get growth on the surface of a cut though, lots of damaged cells there, so sanitary equipment is still very important.

 

It's also easier to slaughter cattle and keep everything pretty sanitary. The anatomy of poultry is not as forgiving, and I guess no one in the US wants to pay for the extra effort.
