Hello,

I've recently started a project to try every drink in Charles H. Baker, Jr.'s magnum opus, A Gentleman's Companion: Around the World with Jigger, Beaker & Flask. Thanks to the Great Liquor Revival in which we find ourselves, it hasn't been too difficult to track down the necessary ingredients. There are a couple, though, that have me stumped, both of which are in Baker's recipe for the Mangareva Cocktail.

First of all, Baker's recipe refers to Hildick's Apple and Honey, which I believe is long dead. I know Hildick's made applejack, so I assume this was just an applejack sweetened with honey. Does anyone else have more information about what this stuff might have tasted like?

The Mangareva Cocktail also calls for Pineapple Paradise. Whaler's currently makes a rum by that name, and pineapple-flavored rum seems plausible in context. But does anyone know if this is the same stuff Baker was using, or is it a different rum with the same name?

Have you fiddled with substitutes?

Not yet. I'm hoping someone can provide a little insight into what exactly I'm aiming for.

If not, it'll be a simple matter to add honey to apple brandy, and pineapple juice to rum...
