BBQ Beef Chili

Serves 8 as Main Dish.

Uses a brisket instead of the traditional ground beef

  • 7 tsp chili powder
  • 1 T garlic powder
  • 2 tsp celery seed
  • 1 tsp coarsely ground pepper
  • 1/2 tsp cayenne pepper
  • 1 fresh beef brisket, 3-4 lbs
  • 1 medium green pepper, chopped
  • 1 small onion, chopped
  • 1 bottle, (12 oz) chili sauce
  • 1 c ketchup
  • 1/2 c barbeque sauce
  • 1/3 c packed brown sugar
  • 1/4 c cider vinegar
  • 1/4 c worchestershire sauce
  • 1 tsp ground mustard
  • 1 can, 15 oz hot chili beans
  • 1 can 15 oz, kidney beans, or other beans

Combine the first five ingredients, rub over brisket. Cut brisket into eight pieces, place in slow cooker.

Combine the rest of the ingredients, except for the beans, and pour over brisket. Cover and cook on high, for 5-6 hours or until meat is tender.

Remove meat, cool slightly. Skim fat from cooking juices. Shred meat with two forks, return to slow cooker. Reduce heat to low, add beans. Cover and cook 1 hour longer.

Practice. Do it over. Get it right.

Mostly, I want people to be as happy eating my food as I am cooking it.
