I have quite a bit left over ginger syrup (about 750 ml) from making candied ginger. I was wondering if it can be used to make some ginger lollipops. Or if because it was cooked for so long, and I don't know the exact water content in it any more if would work well. Also the syrup has recrystalized quite a bit.

I have made hard candies - drops, not lollipops - but the principle is the same.

You should add a little corn syrup.

I think there are several threads that discuss it.

I'll see if I can find a site with the specifics you will need.

Here's a simple bit regarding temps.

Here's a simple  bit regarding temps.

I dunno if what he made is too concenrated now, but you could make a Gingered Vodka Gimlet with it.

2 ounce Vodka

1 ounce lime juice

giner syrup. (yours may be super concentrated, so you may not need much, less the drink become super sweet)

shake on ice. strain into chilled cocktail glass. Garnish wth thin lime wheel or wedge and a piece of candied ginger.

I've still got more than a half-gallon of syrup from my last batch of ginger. It's been living in the back of the fridge. I supposed I should try to do something with it. I did use a cup or so when I made a batch of mincemeat.

Did I mention that I prepare the stuff in really big batches?

Anyone want to share a candied ginger recipe?

I love candied ginger and I've candied fruit before, but not ginger. Is it superior when you do it yourself?

What about ginger ale? Add some carbonated water. You might have to reduce it first.

Andie, what do you use all that candied ginger for? Or am I stupid?

I like to bake nice things. And then I eat them. Then I can bake some more.
