    Dinner 2021

    Once upon a time there was an eG discussion about the Dinner thread passing a certain goalpost (number of pages, or years continuing uninterrupted...whatever). The challenge of the discussion was to make something from a past post in the huge Dinner thread discussion. I chose a side dish from a post by legacy member @Jinmyo . It was simple and hardy. It was a can of Cannellini beans or Great Northern beans, heated with a can of Italian-spiced stewed tomatoes, served open-faced over garlic bread. You smash about 1/3 of the beans so the starch will thicken the mixture a little and also smash any too-large tomatoes from the Stewed tomatoes. You could also use regular stewed tomatoes and add your own spice theme (rosemary, thyme, whatever floats your boat). I tweaked the recipe a little and added shredded rotisserie chicken which changed the side into a simple peasant meal. Easy peasy. Perfect for a cold Autumn evening which we finally had here last night.

  7. As some eG members are aware, I post a lot of sale-priced cookbook finds on eGullet. There was a cookbook with "Milk Street" in the title that I knew was not part of the Milk Street cookbook line. I attempted to contact Amazon to let them know of this "counterfeit-titled" cookbook but they wanted me to jump through so many hoops before they would lift a finger to verify that it was not an official Milk Street cookbook that I gave up on Amazon. They obviously did not want to know they were selling bad goods, so to speak. I turned around and let Milk Street know about the questionable cookbook. They thanked me and the next day the Amazon listing was gone. My advice would be to contact the Modernist people, give them the book's ASIN number and questionable title and let them handle it. Why waste your money on something that's obviously not authentic?

    As suggested, freezing would work. My mom would make fried rice with rice leftovers...use the protein of your choice (my mom would dice up a ham steak...chopped shrimp would be good, as well). She used small-diced celery and diced water chestnuts (canned) to add some crunch to contrast against the soft rice (with chopped green onion, too). Plus, you could make a rice pudding. With raisins. None of my brothers liked raisins so I always knew when my mom made rice pudding, I would be the only kid eating it so I pretended she made it just for me.

  17. I bought and used my wok in my pre-eG days. Haven't used it much lately though I was gung ho in using it quite a bit originally. I was told the wok hei would develop over time through use, and it did.
  18. Yes. They don't explode. You're supposed to peel off the label which I believe exposes the porous "paper" underneath the label. The instructions I've seen on them state "8 minutes" on high in the microwave. I've always found, generally, a pierced potato (without any wrapping on it) takes about 7 minutes to fully cook in a microwave on high, so your mileage may vary regarding the "doneness" of these potatoes...also depending on the wattage of your microwave, too. The main reason I bought them was a) because it was just one potato and not a bag of them and b) I assumed they were completely washed and ready to cook and I was fine with that. Regarding the whistle you heard, most likely it just the sound of the steam from the potato escaping through the wrapping. As an aside, I've nuked those "steamer" bags of frozen veggies and they also sometimes make a whistling sound and inflate and look like they're going to explode...but they don't. Another reason I liked these wrapped potatoes is because they were approximately all the same size so I didn't have to sort through a pile of loose potatoes in the grocery store to find a decent-sized potato...they were all decent-sized.

  21. The link wording wasn't mine. It was the title of the article provided by that web site's editor and/or reporter. The gist of it means that the recipient of your electronic gift will be notified via either their email address or, likely, a text sent to their mobile phone number. All this means is If the gift giver doesn't have the recipient's home address, there's an alternative way of sending someone a gift from Amazon. Then when the recipient (who got the email or text) goes to Amazon to receive the gift, Amazon will let them decide whether to accept the original gift as-is, or they can opt to not receive that gift but receive an equitable gift card amount from Amazon. The original gift-sender won't know that the recipient decided not to receive their gift and get the Amazon gift card instead. The original sender will just be notified by Amazon that the recipient said something generic like "Thanks for the gift"...not knowing an exchange happened. Supposedly, this will make everyone happy.

The Amazon info page blurb says there are dozen of recipes in this book but it's mostly a reference or "How-to" book. "How to Cook Without a Book, Completely Updated and Revised: Recipes and Techniques Every Cook Should Know by Heart: A Cookbook" Kindle Edition $1.99US (eG-friendly Amazon.com link) Another cookbook aimed at those who haven't been in a kitchen in a while...but at a little higher level than the cookbook listed above.
