  10. Hershey's make a dutch process cocoa. Its called Hershey's dark. ← Thanks for that. In both my local Vons and Albertson's, all they had for sale was either Hershey's Cocoa or Nestlés Cocoa. Neither was Dutch-processed.
  11. Let me also add "apples" to this puzzle. There's another clue that's a dead giveaway but I'll hold off on it for now. So it'd be: Crullers, apples & a hot dog (or sausage). And there's a trivia bonus for behind the scenes of the film ("How'd they do that?") involving Jello ← Wizard of Oz? All I can think of is that the Horse of Many Colors was painted with powdered Jello. ← DING! DING! (or should that be "DING DONG"?) We have a winnah, folks! Auntie Em brings out hot crullers shortly before Dorothy sings "Somewhere Over the Rainbow". The hot dog/sausage was what Professor Marvel was roasting over an open fire when Dorothy and Toto (who stole the weiner) came upon his campsite while they were running away from home. The apples were from the living trees in the forest where they found the Tin Woodsman. The "Horse of a Different Color" in the Emerald City sequence was colored using powdered Jello (that the horse kept licking off between takes).   12. I would think titles by specific authors (Beard, Julia, Jacques, etc) wouldn't change from edition to edition. It's more likely the "umbrella" type cookbooks (not written by a specific author and not focusing on one cuisine) would change from edition to edition. The "Joy of Cooking" is a good example. Another would be the "Better Homes and Gardens New Cookbook". There are recipes in my mom's circa 1953 edition that are not in the current edition. Which sucks if you grew up on the recipes in the 1953 edition (luckily, I was able to buy a 1953 edition on eBay). Your example of Marcella isn't quite the same situation since her "Essentials" is a sort-of "Best of" her previous "Classic Italian Cooking" and "More Classic Italian Cooking". You can always check the cookbooks out from your local library and take the time to compare the cookbooks side by side.
  13. Regarding the World Peace Cookies, I had a heckuva time trying to find Dutch-process Cocoa! I can't believe grocery stores don't carry it anymore. I take that back, one store had an eleven dollar box imported from Europe.

  15. Thanks, Dorie. Yes, my cookies ended up quite thin/flat. I will have to check my oven for proper calibration. I also realize now that I didn't cut them at the recommended 1/2". Think 1/4". That'll teach me to keep a ruler in the kitchen! As for getting more cookies out of the recipe, do you think there'd be a problem with just doubling the recipe? The texture of the cookie is quite interesting. The dough holds together with just a prayer, long enough to bake them. And then when you bite into one of the baked cookies, it reverts back to its crumbly chaotic state. And the salt adds an interesting counterpoint to all the sweetness. It's a crowd pleaser.

  18. America's Test Kitchen also tested coffees and Dunkin' Donuts failed miserably. This was regarding their bagged beans, though, not based upon their store brews. Apparently, there's a high ratio of "Quakers" (poorly roasted beans) per bag of Dunkin' Donut coffee beans which lend a bitter taste to the final brew.

  20. I made the World Peace cookies for a Super Bowl party I attended. They were all gone before the end of the first half of the game. I was discussing the recipe with a woman at the party and when she found out there weren't any eggs in the cookie, she said "Oh my God, you could just eat the dough!" I ended up chopping up some Scharffen Berger chocolate bars I found at Trader Joe's for the chocolate "chips" in the recipe. It was probably overkill, but it made for a heckuva great cookie. My only problem with the cookie is that they turned out quite flat. I didn't get the thick cookies pictured in earlier posts in this discussion by Patrick S and fanny_the_fairy. I made the dough on Saturday and baked them on Sunday so the dough was definitely chilled. They literally went from the refrigerator to the cookie sheet. I'm thinking now that I may have sliced them too thin to begin with, trying to get more cookies out of the dough. I ended up with about 34 cookies total. Still, it was an amazingly good cookie. I thought if you were a magazine subscriber, the access to the web resources should have been included. Perhaps you should post on that thread to see if you can revive it and get more opinions.
  22. I use that sauce with meatballs or those little Hillshire Farms sausages...makes a great and easy appetizer. But it's not as "day-glo" red as what's served in Chinese restaurants.
  23. Not to rub salt in the wound...but where I live I receive two different PBS stations on my cable system and both air "ATK" (one station runs the show a week later than the other). As a bonus, aside from "ATK", they both air different cooking shows so I get about 6 hours of PBS cooking shows every Saturday, which rocks.

As far as finding things on eGullet, if memory serves me correctly, you can find anything here! ← Thanks for the compliment! My search attempts kept faltering. I wonder if there's something about the name of the show that sends the search engine off the deep end. As much as people either love or hate Christopher Kimball and his bow ties, I would have thought such a discussion would have already existed. I was disappointed to see them dedicate a show to a low calorie cheesecake this last weekend. It's like making a tofu T-bone ...what's the point?
