  1. So, where can I find the definitive recipe for this? I saw this made on Rachel Ray's brief celebrity cooking show. The Chinese actress who was on ER (Ming na wen?) made them. It looks lovely, like deconstructed Polish stuffed cabbage, so I want to serve it to my polish SMIL.
  2. I was all excited about my CNY plans until I came here to find out everything I was planning is untraditional. I've been watching Kylie Kwong and her book is on the way from Amazon. I want to make her shrimp wontons with hot and sour sauce and as per recommendation upthread I'll steam a whole fish. Of all the cuisines I've cooked professionally, this is one that's new to me and that I love to eat above all others. Well, Chinese and japanese really. Remember the Eat Right for Your Blood Type craze a few years ago? It said all the traditional ingredients are bad for this B positive. I'll live dangerously.
  3. There's also robiola pineta, stinky with pine needles stuck to it. Also, Brescianella Stagionata, but it's more fruity than epoisses. I love it with strawberries. My favorite is La Tur, a wrinkly rind 3 milk blend. Aged and slightly runny on the outside, fresh on the inside. I have some in my fridge and will photograph when I enjoy it. You might also like to compare mountain reggiano with traditional. Burrata is also a nice study in gourmet mozzarella.
  4. My favorites from SciaScia are Al Cappuccino and Lemonade Stand. And the caramel one seems to be out of rotation. Truly exceptional product by an exceptional chocolatier. He was dabbling in chocolate bark, I hope he's still making it.
  5. It's your guilty pleasure chocolate. I can sometimes be found packing a snickers without a permit. It reminds me of junior high school. Shh, don't tell anyone.
  6. I'd like a honey spice cake with some apple pie filling oozing out. This premise has many possibilities... almond cake with cherry lava, lemon cake with blueberry ginger lava, carrot cake with cream cheese lava (not sure if that would be good). Savory: olive oil cakes with creamed corn center... mmm.
  7. I always tell my new hubby not to suffer the markup on flowers today. Instead, I enjoy a chocophile dream day. Last year's haul included The Painted Truffle -Neuhaus - and Venchi Chocolate from three continents - divine. This year as a nod to a chocolate post on my blog, I got the Vosges Hat Box that includes chocolate covered chili powder dusted tortilla chips. Wow, and yumm. There may not be any left to enjoy in front of the fire tonight! What's on your chocolate wish list?
  8. I'm sure they're at Fairway or Citarella. Not mainstream enough to be in a supermarket. Quail eggs too. Both available from D'Artagnan. Ostrich eggs, now there's one I want to see on the shelf! Use a large paella pan to serve sunny side up
  9. I was proposed to in Ruth's Chris parking lot, so parking lots are romantic too! It was also pouring rain. I think Monk's Cafe is up there. It's so dark and there are so many people running around no one notices if something indecent is going on... not that I'd know
  10. There are 2 breeds of Cabrales. Walnut leaf wrapped, the nicely complex one. And one that comes in a dark green foil, that I sent back to a supplier and said, "That's not cheese, it's moldy manure in foil!" I've been enjoying Roaring 40's blue from Australia. Quite potent and boisterous.
  11. I've been using the Rosle for a few months now. Love it! You don't have to play jagged metal see saw to get lids off. I only use the old model for tuna - to drain well. Makes a great wedding shower gift.
  12. Eberly poulty spotted at North Wales Whole Foods yesterday. A generous supply said it's not going anywhere anytime soon. I purchased a fryer to make chicken under a brick. I wish I had a camera when the clerk at Home Depot learned why I was purchasing bricks. They were $.41 each by the way - the bricks, chicken $3.99/LB. I have noticed prices being lowered in WFM as they said they would be doing a few months ago. A Robert Rothschild Farm product of roasted pineapple habanero dip was $8.19 when I bought it a few weeks ago, $6.49 the other day. No sale sign or discontinue sign on the shelf. I did notice some discontinue signs which I appreciated. You can choose to stock up on something before it goes by the wayside, and you'll know why it's not on the shelf next time you look for it. The North Wales location is smaller than most. However, they have the highest concentration of helpful staff of other Whole Foods I've been in. The one I frequent in DC when I visit my brother in law is so crowded all the time you can't browse anything on the shelf. I now travel groceries in hand or get in get out fast.

  14. I love the Pie and Pastry Bible by Rose Levy Beranbaum. It has a good tart section and teaches you pastry principle and then you go on to make your own fillings. Worth owning.
  15. Great idea to set a date Sandy, and it's a great weekend. As we've been to Mama Palma's and Pietro's late 2005, how about the fairmount crawl? Rembrandt's and Illuminaire starting at 2pm on Sat. the 23rd?
  16. Since he's familiar with the area, Scott would be the person to lead a New haven Road Trip. Sounds like fair initiation to me. I'm sure it couldn't beat our Brooklyn Trip in '04!
  17. Spotted: Great quality meat. Location: Downingtown Wegman's. Type: Dry aged Prime strip steaks. In cry-o-vac, easy to travel with long shelf life without freezing. $23.99/LB I will give these a try when I have a need for great meat. Their fish counter looked wonderful and fresh, but offerings were standard. I've noticed monkfish is getting harder to find, and more expensive. Poor man's lobster should be renamed exo-skeleton free lobster.
  18. True. I'd rather spend $50 on a raw steak than $50 for a steak served to me in a restaurant. I do spend money in Ruth's Chris at KOP mall. Mostly because the service at the bar is better than most restaurants. The best meat I've been served was at Morton's but will not return due to snooty wine service. I do love Sullivan's but it's popularity means you can't even get near the bar even on a Monday night. Interestingly, there's an article by Coleman Andrews in February's Gourmet about the rise of the steakhouse in the last few years. Time for a CraftSteak Philly branch?
  19. For Christmas I ordered the dry aged prime rib from Niman Ranch. Cost $279. Being it was a holiday, I didn't mind. It was fabulous, the best roast I've ever had. I argued that in a grocery store, you may get a flavorful roast, maybe not. Escoffier could cook it himself but if it wasn't beefy, it would be lacking. The Niman Ranch roast could have taken a lot of abuse (not that it did) and still would have been wonderful. I'll also add that when I want high end steak like dagordon is looking for, I leave it to the steakhouse. I am a well trained chef (working in a renowned restuarant on the Upper West side gives your resume eternal stamp of approval - thanks NY!) but home equipment simply does not allow for enough heat to sear meat like that. Restaurant broilers typically get near 1500 degrees at least and this is illegal although not impossible in a residential home. The only time I've attained ample heat was when I threw large quantities of hardwood charcoal on top of briquettes on the grill which ironically, almost led to burning down the fire escape. I, too have been unhappy with fish. I've resorted to making friends with the local guy who will order anything I want, but it all comes from the same place everyone else is buying it from. The general seafood selection in Bridgeport is salmon, flounder, clams & crabmeat. Frozen lobster for the 'special' occasions. BTW, I'm trying to track down frozen crawfish meat for Valentine's day and my guy is stumped. Any leads? I want to recreate crawfish pies from NOLA, our wedding locale a few months ago.

  21. Went to Victory Brewing in Downingtown, PA yesterday. Brought home a growler of Prima Pils, a 750 mL bottle of V-12 (my all time favorite of theirs aside from their 10th anniv alt beer) and tried their scarlet fire Rauchbier while I was there. It was excellent although I can tolerate only about 4 oz. at a time. It would be great with BBQ. They did have Uncle Teddy's Bitter last week but I missed it!

  23. While I'm defintely still 'out there' I can't be called the Di Bruno's expert anymore. I took some time off, married the long time beau, and will explore other options in the food world soon. I did stop in to Di Bruno's before Thanksgiving to get some goods for my table, and things look better than ever. It's Vacherin Mont D'Or season in the cheese cave! As for pancetta, I've never seen an imported one in this country. Guanciale & lardo as well, all domestic, all over. Our USDA doesn't allow the items in because they haven't been cured long enough and are considered raw. A quick google yielded great looking pancetta with cinnamon from Salumi, Armandino Batali's shop in Seattle, and great offerings from D'Artagnan, all made in the good ol' US of A. On a product finding adventure to Bologna, people traveling with me looked at me strangely when I rejoiced at finding a 1 kilo chunk of lardo in cryovac that I smuggled home. It was the tastiest fat ever, I put it into the meatballs in The Splendid Table cookbook.
  24. I want to treat a friend and her husband to dinner, since I'm in Philadelphia I need to gauge the food scene. I remember when North Pond first opened it got lots of press and I really wanted to go there. Is it still worthy of acclaim? The menus on the website seem terrific. When I was there a few years ago I took them to Charlie Trotter's, and I know they've been to Schwa recently. Any help appreciated... thanks.

    A Decade of Bastards

    Anyone had it? I see the Beer Yard is listed as having some but I haven't gotten there yet. The Ruination Ale knocks the socks off my husband, and his socks are pretty mean at the end of the day.
