  3. Not sure who Miss Vickie is, but they are Canadian Frito-Lay potato chips. edit to add: perhaps I should refer to them properly as the Canadienne pommes de terre croustilles? Marlene, I go bonkers for Rice Crispy Treats. Which is why they are banned from my kitchen and household. I cannot control myself with those things. Then I drive everyone around me nuts from the sugar buzz. They ususally have to be ripped from my tightly clamped fingers.

  7. I've got the mini muffin one with sled. I haven't used it yet and was wondering how it would work for some really mini sized cheesecakes. I thought it might do pretty well with the unmolding part and would produce the perfect finger-food sized dessert bites. Will report back when I attempt this.

  13. So, by the same logic, would cranberry juice and scotch be "crotch"? The possibilities are endless.....Captain Morgan's Spiced Rum, scotch and cranberry: "funky crotch". Maybe add a little Stilton for "cheesy, funky crotch".... (full disclosure: I must properly attribute the above to the brilliant wit of slkinsey) Eric, It completely read as Sam's too.

    My mother has three brothers, all with sons. I grew up around Alaskan men that fished, nearly daily! My preference was always Sockeye, but due to fascination, ivory Kings are a close tie. Fish should never be mushy or strong/stinky/fishy in smell -- fresh from the market or cooked.
  15. This is an area of cocktail/product knowledge that seems to be growing rapidly -- vegetarian friendly liquors. (That and celiac). We recently had a whole discussion on Campari, E-120 and cochineal insects on Webtender. (Campari is not kosher nor vegetarian friendly.) Yes, I am learning much more than I ever anticipated .... Bugs!

    Onion Confit

    schneich - fatnastic photos and thank you for your most generous sharing of those recipes. I've made a three onion "marmalade" by caramelising them with a bit of brown sugar, an herb (I'm not sure, but I think it is thyme), perhaps a bay leaf, peppercorns and balsamic vinegar. Would this qualify as onion confit? Hmmm, note to self: must relocate that recipe. Anyway, I jarred it and gave them away as holiday gifts but saved one for myself. It looks quit similar to everyone's photos and is absolutely wonderful on a crusty baguette.
  21. Beads... Our King cakes came with babies on the side. We were surprisingly busy with po' boys and muffalattas on the menu and all of our beer reps showing up with metric tons of beads and blinking pins. One of them were throwing beads at us (the bartenders) as if we were seals at Sea World.

  24. Keep in mind that only a serious bar dedicated to proper wine service will afford the necessary equipment. Refrigeration is a monsterous expense and if the establishment isn't dedicated to the perfect service of wine from top to bottom, well then temperatures may suffer. If your beer is too cold, it is often a sign of a beer bottle cooler on the fritz.(compressor working far too hard due to whatever solinoid this or that -- I will occasionally hear our repairmen muttering. Some of it makes sense, some I just don't care. I just want it fixed in time for our rush). Other times when beer or white wine are too cold from a bar cooler it is because of overstocking and not allowing for a proper air space for circulation around all of the product. That is a number one error on any bartender trying to do good without understanding what it is conversely doing to the equipment. Talking a bar/restaurant owner into purchasing quality refrigeration is one up hill battle I've faced many a time and will almost always lose on as well. I want Perlicks or Glastenders and will end up with crappy, cheap qualitied and priced Trues. I want use specific pieces, I get multi-purpose. edit: grammar!
