Taco Wednesday in my house. Now is not the time for conspiracy theories... BUT... Ages ago I made a post about how I hate Taco night. It's supposed to be easy 'serve yourself' but is still heaps of work/clean up for the cook AKA me. My other half knows I post here, has no interest, I'm almost sure he dosen't check my posts. But ever since that post, both husband and son forgoe the DIY and request I assemble. It is worse. 😂 Beef, salsa, sour, lettuce, jalepeno, onion etc

'Fried Rice' Mush. I was feeling all pleased with my pantry basic practise, bacon from freezer, an oriental fried rice packet from the depths of the pantry, cup of frozen vegetables, eggs, seasonings. Then my husband asked if I might want to save the practise til the proverbial actually hit the fan.. Might have a point.

For my husband, Tomahawk and Pink Peppercorn Sauce. Reverse sear method. Was an even medium, didn't get a shot as trying to avoid being stabbed.

Yes we can do click and collect online, but not delivery yet. It's getting closer though. 🙂 Edit: The staff doing the online orders are a pet peeve of mine! Not them personally but the carts are soooo big and seemingly always where I want to be 😅. First world problems huh.

We too had Pasta and Meatballs. I was sure I had Spagetti but decided slurp factor wasn't enough to offset the 30km drive so salad spirals made do. One. Two Three I skipped some steps 🤷♀️

Last night the boys had Curried Sausages. While the hub says I'm getting ever closer to the perfect flavour (without a packet mix), I still can't make it look any better 😁 Tonight after a hard day I went for a ICBF dinner of Rotis.. Rotisserere... Rotissere?? (I would kill for phone spell check) Chicken salad rolls with store bought potato salad and coleslaw.

Corned Beef (I made on Sunday for Kidlets Lunchbox Sandwich Meat), Veg, Rustic Mash (AKA Mumma ain't got no time to peel these Pots) and a Mayo/Dijon/Wholegrain Sauce. I need to utilize every get ahead method I can during the week sometimes.

We were tired so we ordered Pizza to the motel rather than going out. Quattro Formaggi for me & kidlet ( my all time fav Pizza) Bbq Supreme for the main man that like 'stuff' on his Pizza Garlic Bread You do not want to know what it cost for what it was 🤦♀️ But because you actually do (because I mentioned it 😂) and because it influenced why I'm posting sh!te Pizza... it was $75 free delivery. I felt the ouch.

Staying in good old Bundaberg for the weekend. Decided to try 'Meekak' an all you can eat Korean Buffet/Bbq place. Authentic? Perhaps not 100% but I've never been to Korea so 🤷♀️. Was fun, staff were amazing, wouldn't rush back but wouldn't hesitate if invited. Kids Plate Parent nibbles Bbq More parent nibbles Kids Drink/Parents Regret

In actually lazy dinner news, the first rebirth of the Roast Lamb. Wholemeal Wraps with Lettuce, Beetroot, Sundried Toms, Feta, Onion & Aioli. There was meant to be Cucumber but those suckers are retailing at $6AUD each at the local and I refuse!

So I can cook the roux to brownish? (These are Noob questions I know). I'm scared of burning so leave it quite pale 3/4 mins before adding the juices. Taking it further would be better not burnt?

Found the energy to make a "Scaled Back" Roast. Or as my husband calls Roast Night - Trash the Kitchen Day. Growing up a Roast wasn't a Roast without at least 6 vegetable sides along with the Pots, Meat & Yorkies. Not happening. 10 hour slow cooked leg of lamb with unpictured Gravy from the juices (diluted). I don't often picture my pan gravys because while they taste great - they look anemic - any ideas? (I have to use flour to thicken to get to an Australian standard of Gravy Paste).

I have been so busy and tired lately and cooking has become a chore not a love. Little Dude reached level 7 the other day, and I told him he could have whatever he wanted in the world for dinner (because it was 99.99% going to be Pizza that I could pick up on the way home from work. Happy Kid, Happy Mum). He went for the 0.01%. 🤦♀️ And a Promise is a Promise. And while Grilled Cheese, Grapes, M&Ms and Haribo isn't exactly an effort filled "dinner" to prep, I did have to go grocery shopping for ALL of the ingredients.

Husdude took one for the testing team on a recent road trip. Verdict: As Dry & Lame as it looked. Lacked real evidence of Sriracha Spice. My Big Mac delivered exactly what I would expect 🤷♀️

Perfectly decent Pork & Beef Bolognese Sauce, made somewhat crap with an emersion blender treatment for he with worn out jaw. Son's dinner pictured - Captain Clicks just had the meat sauce. Repurposed by request 24 hours later because someone (who I would NEVER accuse of not being committed to recovery) 'Misses Crunch' ... after maybe 36 hours 😅🤦♀️

Boringish work night meal with a new technique trialed. Breaded pork Chop, Peas and Mash thats not mashed. Not going to lie I think I make darned good Mashed Pots using a ricer, melted butter & warm milk method - I get smooth, fluffy but still... solid feeling mash (this is hard to describe!). Decided to try a version using warm butter and an electric whisk. It made a very smooth, light and creamy Mash - which for me didn't quite hit the spot (Seemed a bit like the 'just add water' powder mash of school dinners). Of course now my Husband is in love with the new version and I hate it. 'Cause life. 🙄

Sorry... Australianism.. Again. Small red skinned ready to eat mini sausages that are not hotdogs/not saveloys/not sausages ... I'm very good at saying what they're not. If you think calling them Cheerio's is confusing the Southern States call them 'Little Boys'!! Edit: Excuse the fridge pic.

I am trying to cut down on my grocery shopping bills with meal planning etc. But. I suck at it. Impulse buying at tiny rural supermarkets is Expensive and, frankly, where I am, poor quality. So this weekend I went to the big town and bought a meat pack at a popular butcher to stock the freezer and hopefully get me on track. It was intense! For $205 AUD I got: 2kg pork sausage, 2kg of Beef sausage, 1/2 kg Cheerios, 1kg of big Bacon, 1kg rib fillet steak, 1kg rump steak, 1kg y bone steak (probably feeding animals), 1kg porterhouse steak, 2kg minced beef, 1kg steakettes, 1 kg pork loin chops, 1kg lamb bbq chops, 1kg beef schnitz, 2kg leg lamb, 2kg boned rolled pork roast and 2kg of silverside. I think I did ok. Also partly driven by my hubs Dr's recommendation that he eats more meat... for a jaw issue... that he also shouldn't chew for... Meatshakes anyone? 😂🤦♀️
