Found the energy to make a "Scaled Back" Roast. Or as my husband calls Roast Night - Trash the Kitchen Day. Growing up a Roast wasn't a Roast without at least 6 vegetable sides along with the Pots, Meat & Yorkies. Not happening. 10 hour slow cooked leg of lamb with unpictured Gravy from the juices (diluted). I don't often picture my pan gravys because while they taste great - they look anemic - any ideas? (I have to use flour to thicken to get to an Australian standard of Gravy Paste).

I have been so busy and tired lately and cooking has become a chore not a love. Little Dude reached level 7 the other day, and I told him he could have whatever he wanted in the world for dinner (because it was 99.99% going to be Pizza that I could pick up on the way home from work. Happy Kid, Happy Mum). He went for the 0.01%. 🤦♀️ And a Promise is a Promise. And while Grilled Cheese, Grapes, M&Ms and Haribo isn't exactly an effort filled "dinner" to prep, I did have to go grocery shopping for ALL of the ingredients.

Husdude took one for the testing team on a recent road trip. Verdict: As Dry & Lame as it looked. Lacked real evidence of Sriracha Spice. My Big Mac delivered exactly what I would expect 🤷♀️

Perfectly decent Pork & Beef Bolognese Sauce, made somewhat crap with an emersion blender treatment for he with worn out jaw. Son's dinner pictured - Captain Clicks just had the meat sauce. Repurposed by request 24 hours later because someone (who I would NEVER accuse of not being committed to recovery) 'Misses Crunch' ... after maybe 36 hours 😅🤦♀️

Boringish work night meal with a new technique trialed. Breaded pork Chop, Peas and Mash thats not mashed. Not going to lie I think I make darned good Mashed Pots using a ricer, melted butter & warm milk method - I get smooth, fluffy but still... solid feeling mash (this is hard to describe!). Decided to try a version using warm butter and an electric whisk. It made a very smooth, light and creamy Mash - which for me didn't quite hit the spot (Seemed a bit like the 'just add water' powder mash of school dinners). Of course now my Husband is in love with the new version and I hate it. 'Cause life. 🙄

Sorry... Australianism.. Again. Small red skinned ready to eat mini sausages that are not hotdogs/not saveloys/not sausages ... I'm very good at saying what they're not. If you think calling them Cheerio's is confusing the Southern States call them 'Little Boys'!! Edit: Excuse the fridge pic.

I am trying to cut down on my grocery shopping bills with meal planning etc. But. I suck at it. Impulse buying at tiny rural supermarkets is Expensive and, frankly, where I am, poor quality. So this weekend I went to the big town and bought a meat pack at a popular butcher to stock the freezer and hopefully get me on track. It was intense! For $205 AUD I got: 2kg pork sausage, 2kg of Beef sausage, 1/2 kg Cheerios, 1kg of big Bacon, 1kg rib fillet steak, 1kg rump steak, 1kg y bone steak (probably feeding animals), 1kg porterhouse steak, 2kg minced beef, 1kg steakettes, 1 kg pork loin chops, 1kg lamb bbq chops, 1kg beef schnitz, 2kg leg lamb, 2kg boned rolled pork roast and 2kg of silverside. I think I did ok. Also partly driven by my hubs Dr's recommendation that he eats more meat... for a jaw issue... that he also shouldn't chew for... Meatshakes anyone? 😂🤦♀️

I think everyone covered Lammingtons real well for me! As for the lady at Hervey Bay, yes pretty tragic and would have been awful for all the families at the celebration to loose such a community active figure like that. But, I can't imagine eating/inhaling something covered in Dessicated Coconut at speed going well for me. Back to Crisps and another shelf stayer for your discussion and disgust was found today. Give me England and plain old pickled onion and prawn cocktail any day 😉.

First day back at School tomorrow. Our today lunch was the 'Oopsie Sushi..' Aka The ones that looked like $h!t. I doubt much will get eaten. There is much playing to be done.

Ok. So my Hub Keeps unusual hours, and while it's Wednesday (at varying times) for us normal folk, it's Saturday for him & his Buddies. His turn to host and I am assembling burgers. It being Wednesday for me I make 'em at a normal time... they eat 'em when they get round to it 😂. Look away lovers of Gourmet & Health. This is not it. Half were beef burgers with Jalapeno, Onion rings, Burger sauce with Bacon and Cheese and half were 'Quater Pounder' style.

Popping in to say I had to google 'Eggslut' thinking I was reading the pronunciation wrong and it was some fancy gourmet thing I hadn't heard of. Nope. It is what it is. And I love it. 😂

We are a trio and my Son is 6. Sushi is his favourite food after chips and nuggets 😂. Despite being rural, Australia truly is a melting pot of cultures and what the kids take is so varied. I wouldn't have even considered giving it a go if he hadn't said 'So & so had Sushi today'... I am aware this might all change as age and judgemental behaviour increases 😔

I am trying to improve the variety in the lunch boxes I make for my big and little boys. First ever attempt. See how they fare overnight. I don't love them enough to make it at 3am before work 😂 He's clearly not a Moe yet!

I will never again forget my lunchbox and leave it (and its remaining cauliflower rice) in my car for 24 hours when the outside temp is 38 degrees. Pee-Yew! 🤢

Hearty Steaming Sausage Casserole! Just what you feel like after being outside all day in 38 degrees! Not. Heres hoping ones husband gets the hint that if his answer to 'what time are you getting home?' is 'I dunno' I'm likely to resort to my timing friendly reheatable favourite stews & soups & casseroles 😂 If his comments of 'oh a hearty summer stew' and 'Thank G we have aircon' are anything to go by he might get it 😂

Yes break time. Colloquialism with its roots in stopping for a cigerette and the Australian insistence that everything is better ending in 'o' or 'a'. And Bernie 'Smoko' is still very much used by the rough and ready and rural and resistant to change 😂. Especially those that start at 0430 finish at 1800.

The baked egg thing from dinner gets repurposed for husbands lunch/smoko. I put it in a wrap with some veg and he will reheat in the crib sandwich press with an unpictured side salad. Badly lit parcel.

"Crustless Quiche" & Salad. The ham fatigue is getting real now. But in times like these its very important not to be wasteful IMO.

You all know I'm a simple gal by now. Tried to mess around with presentation tonight 🤦♀️. Him: Whats this called? Me: Lamb Peas & Spuds Him: Oh. Over done lamb. Boiled then pan browned taytos, mashed minty peas & Feta.

Ham & Cheese Toasties ( I have come over all American and like the cast iron pan method - probably should throw away my Toastie Press space filler ). I make a cheese 'paste' with strong cheddar, leftover cheese ends (goats this time) mustard, woster, salt & pep. Ham salad wrap for husbands Smoko / First lunch.

Dinner looks like sh**e because I forgot to take a picture until after I had packed the leftovers for hubs lunch. Rogan Josh (Pataks paste school night cheat) and baked cauli rice. Unpictured were poppadoms & mango chutney.
