  2. Safe yes, Depending on how air tight that container was and plastic sometimes can have an off flavor. Flour is pretty cheap, but ingredients add up and I would personally not want a stale batch of product. I would use some of it diluted with other flour and see how it tastes and turns out.   6. I would not freeze If possible. Meaning, if the meat will still be edible on Saturday after preparing it by a quick search and roast. How does it look and smell. Is it dry not sitting in its own fluids etc. As long as it hasn't been grossly mismanaged I'm thinking it should be ok prepare under your best possible technique without freezing. I am not a scientist and still learning sous vide techniques. I just don't like what freezing does to meat and it is not always a problem solver when it comes to keeping things from spoiling.   7. It looks like from your picture that you are cutting on an angle. It is blurry so I assume that you are using the knife quickly. When not cutting straight you are almost sure to have uneven finished product unless you are cutting on a bias. Sent from my Nexus 7 using Tapatalk HD

  13. I would think that the average cook investing in books of this caliber would have the ability/taste to adjust sugar accordingly to the flavor agent being used. I believe cooking without any instinct doesn't feel good. That being said I understand that certain recipe quantities need to be followed for scientific reasons. Sent from my Nexus 7 using Tapatalk 2
