  5. Just a burger tonight. Tucked in there is sliced bacon and bacon jam on the bottom which I made just prior, grilled onions and the top bun smeared with chipotle mayo. I tad messy but tasty
  6. Tonight I utilized some leftover grilled chicken on good corn tortillas with black beans and rice
  7. Made black beans and rice with mojo marinated chicken, side of jicama in a citrus marinade, Cuban bread and a tossed salad

  10. Your cauliflower looks wonderful. Roasted vegetables are some of my favorite things to make and eat. Love the transformation and inherent sweetness that comes forward when roasted
  11. Happy Anniversary Shelby Not sure what we will be having NYE. Will be staying with my cuz and his wife at their beach condo. I have some tuna loin which could go a few ways and have made my yearly Texas caviar with black eyed peas as the base and made collards as well. Got to get the peas and collards in. Boy do I love collards. I'm also as thinking of making a salmon rillette
  12. A requested meal from my daughter before she heads back to Austin tomorrow. A tuna stack paired with a nice cold sake
  13. Last night was my daughter birthday and dinner was brisket served with roasted vegetables, potatoes, sweet potatoes, carrots, bussel sprouts and a salad. Dessert was an ice cream cake

    Breakfast! 2015

    A bag of Yukon Gold potatoes on the counter needed to get some action. A Spanish tortilla was in order
  18. since its been in the 80s here, well up until this weekend, we have to pretend it's cold and my oven is on. Baked potatoes and a chicken breast is roasting for dinner
  19. I was in the mood for a nice beef stew even though it's been pretty warm here. Living near the tropic zone you can't always wait for it to get cold to enjoy a stew. Boneless short rib braised in a broth with porter and stout
  20. The blame falls on the feet of the government. Atrocities like this flourish under a corrupt government who in this case has much to gain from a flourishing sugar and rum industry. They have done nothing to protect their people from big industry while they profit from the proceeds

  24. It's hard to know how restrictive their kosher rules are. There are some basics like no pork or shellfish and the meat and fowl needing to be killed according to the laws of Judaism to be kosher. No meat or chicken with dairy. But some even need fish to be dispatched in a way to make it kosher and fish need to have fins and scales and not be bottom feeders It would be a good idea to ask your guests for guidance
  25. Needed a quick dinner tonight Patagonian scallops tossed with guaillo, ancho and morita powder and seared. Tossed on top of a toasted corn tortilla topped with black beans laced with a chipotle purée I make, shredded lettuce, cilantro and diced tomatoes
