  1. A very quick dinner. Scallops, cooks in minutes, cubed mango and slaw. Punched my buttons!
  2. Sous vide chicken thighs cooked yesterday and chilled. Tossed in a hot CI skillet tonight and roasted until brown. The Good stuff that stuck to the skillet was scraped up and added to the mashed potatoes but so damn good to waste
  3. Such wonderful meals posted. Excellent job! Today i did 12 chicken thighs SV for chicken "confit". Quick chilled for later use. Tonight it was a quick coleslaw and seared salmon.
  4. Tonight I made a Mexican mole with chicken. A chicken was deboned and cubed and the bones and scraps were tossed in a pressure cooker to make stock. Both were used in the mole. A couple of yellow onions and a couple of poblano peppers were sliced and made its way in to the mole until they basically dissolved. Served with rice and fresh corn tortillas with avocado, cilantro and lime. Such a great Oaxacan dish.
  5. The beans are edamames. The crab mixture included egg, mayo, mustard, panko, Old Bay, Worcestershire, parsley and lemon juice. Used a pound of lump and made 8 little cakes The mix
  6. Relishing the fact I'm not allergic to crab. It's crab cakes again!!

  11. Just a burger tonight. Tucked in there is sliced bacon and bacon jam on the bottom which I made just prior, grilled onions and the top bun smeared with chipotle mayo. I tad messy but tasty
  12. Tonight I utilized some leftover grilled chicken on good corn tortillas with black beans and rice
  13. Made black beans and rice with mojo marinated chicken, side of jicama in a citrus marinade, Cuban bread and a tossed salad

  16. Your cauliflower looks wonderful. Roasted vegetables are some of my favorite things to make and eat. Love the transformation and inherent sweetness that comes forward when roasted
  17. Happy Anniversary Shelby Not sure what we will be having NYE. Will be staying with my cuz and his wife at their beach condo. I have some tuna loin which could go a few ways and have made my yearly Texas caviar with black eyed peas as the base and made collards as well. Got to get the peas and collards in. Boy do I love collards. I'm also as thinking of making a salmon rillette
  18. A requested meal from my daughter before she heads back to Austin tomorrow. A tuna stack paired with a nice cold sake
  19. Last night was my daughter birthday and dinner was brisket served with roasted vegetables, potatoes, sweet potatoes, carrots, bussel sprouts and a salad. Dessert was an ice cream cake
  20. I wish my Anovas had wifi. Bluetooth is such a waste but I'm not buying another one. Well not now

    Breakfast! 2015

    A bag of Yukon Gold potatoes on the counter needed to get some action. A Spanish tortilla was in order
  24. since its been in the 80s here, well up until this weekend, we have to pretend it's cold and my oven is on. Baked potatoes and a chicken breast is roasting for dinner
  25. I was in the mood for a nice beef stew even though it's been pretty warm here. Living near the tropic zone you can't always wait for it to get cold to enjoy a stew. Boneless short rib braised in a broth with porter and stout
