  1. Thanks ninagluck for the inspiration on the corn fritters and blue_dolphin for the smoked canned tuna idea. It was what's for dinner. They both went well together
  2. Okay this peaked my interest. Two cans of Bumble Bee solid white tuna was smoked today over apple wood in my electric smoker for a couple of hours. Figured the smoking and heat would dry it out and could only make it better. Worked really well. Thanks for the inspiration blue_dolphin
  3. That's a ton of work. Second the floor fan. Would love to see the results of your labor
  4. Looks fantastic. Love breakfast potatoes and it was what I made to go with a fried egg this morning
  5. Great color on the ribs Shelby. Fun in the toy box
  6. I'm an off the cuff cook most of the time. Look in the freezer and fridge and ask myself what can I put together. I'm think there are are few of us around here. Tonight was a perfect example. Wife's working on an art project inside and I'm outside in the pool house on guitar jamming to old rock and roll. Play lead like I cook. Can't read a note but my fingers tend to find their way most of the time. Most of all I have a good time. Tonight I looked in the kitchen and found some mini peppers that had seen better days, half a shallot, a few mini yellow tomatoes, some sliced mango and romaine. In the freeze I had a small vac bag of Patagonian scallops. Got to work and sliced it all up and seasoned the scallops. Cooked up the shallots, most of the tomatoes and peppers with the mango to make a cooked "salsa" then hit the scallops with Wondra ( I love this stuff) and gave them a quick flash in the pan. Toasted some corn tortillas on the camal, layered it all up and it was dinner. There is a certain gratification of turning very little into something tasty
  7. Thanks Anna. It started out from stock I made from fish carcasses, shrimp shells and aromatics that I had in the freezer. To flavor it further I added lemongrass and let it simmer a while. My wife was running late so I had to keep adding water as it simmered. Just before serving I added gojuchang then thin sliced carrots, shallots and celery and pulled the lemongrass out. Then added green onion, the noodles ( they cook so fast) and the fish. The fish was also smeared with the gojuchang before searing
  8. Salmon in an aromatic seafood broth with green noodles
  9. I recently cut kernels from 5 ears of toasted corn before leaving town for a few days. All stashed in the freezer It's been a while since I've made corn fritters and Nina's look great. Just the inspiration I needed.
  10. This morning we enjoyed a bowl of watermelon, and a greened flesh cantaloupe with Valbreso French Feta and fresh basil.
  11. @Jon Savage The Stir Crazy has done well for me. On my third in over 10 yrs. Still a cheap way to roast with decent results. Did the heat gun dog bowl for a short while but couldn't deal with standing there stirring for 10+ minutes. I even connected my heat gun to a mic stand so I didn't have to hold that and stir at the same time. The heat gun is in the garage as an emergency backup if needed. Usually have about 30 lbs of green on hand at any one time
  12. Oxidation can be a very good thing for whiskey up to a point
  13. No heat sounds like an electrical problem. I would certainly contact them
  14. Real hummus is a thing of beauty. Heading to the beach to meet friends this weekend and the thought of Sabra hummus was more than I could handle. Cooked from dried using the cooking liquid to thin adds so much flavor. Lots of fresh pressed lemon juice
  15. Ramen with pork belly
  16. My wife's most requested work day breakfast. An egg roll up
  17. Kay, I'm a sucker for grits and was inspired by your dish. I made some yellow grits and we had corn off the cob in the fridge which went in as well as some green onion tops and a little cilantro. I had some wild sockeye salmon from Costco in the freezer and thought, why not.
  18. Grilled lamb chops with roasted potatoes and sautéed dates
  19. I use a rack but before I bought one I would vacuum seal heavy small objects and add that to the bag. I was given a couple of boxes of whiskey stones which I found utterly useless but then found a use for them.
  20. Thanks! Mango
  21. Tuna poke over rice this evening
  22. It's in the 90s here and I'd make that tomorrow if I had the shanks on hand. One of my favorite meals and I'm not afraid to turn the oven on in the summer. Looks delicious
  23. They didn't list the ingredients on the nutritional label for the traditional peanut butter. What else is in there besides peanuts and salt?
  24. Another attempt at a childhood favorite, hummus bil lahme. This time not over cooked. The toasted pine nuts and baharat spices make it sing
  25. What's for dinner? I don't know just yet Let's see what I have to work with.
