Rack of lamb with roasted Brussels sprouts. I am so overwhelmed by my technique. Trim the lamb, make sure to remove silver skin. Pre salt the lamb. Refrigerate while working. Have DH who works from home remove it from the fridge for about an hour. Steam at 140 in CSO for 30 minutes. Sear in Darto pan in scmaltz. Rest for a little bit. Eat and enjoy. And I have eGullet to thank for my cooking success!

Steaks, potato soufflé, blue cheese sauce while continuing our visit with my MIL. By the grace of food Gods my steak was (almost) not over cooked!

Griswald (very) rusty 8 inch skillet for 15 dollars. Steel wool scrub and a quick (lazy) stove top heating with small amount of bacon fat. Depending on how it cooks, I may do a real scrubbing/seasoning later. d

That’s how DH likes it. He lived in Germany for a couple of years. Schnitzel with mushroom sauce “Jagerschnitzel” is usually not breaded. I will call a thin pork cutlet just to get a like from you 😍. yellow foot mushrooms were delicious. Sometimes Whole Foods carries real wild mushrooms.

Thank you for the link. Brown butter, espresso, maple syrup sauce that he serves with the duck sounds delicious.

Chicken roasted in CSO steam bake 450 for 50 minutes. I prefer pre heated cast iron skillet in convection oven method but it takes longer. CSO chicken is done in 50 minutes while I am sipping lovely WA Pinot sent by our thoughtful DIL.

Flying back home to Washington DC from Tokyo Narita airport. I had high expectations for ANA lounge, but alas, it was sad looking. One of the sandwiches was labeled “potato”, it had mashed potatoes between slices of bread.

Going home today. Last meal in the city: gyoza. @JoNorvelleWalker Very easy to order on iPad, in English. They use a metal box hot plate to cook gyoza. Also you can order a variety of raw horse meat but we left it till the next trip.
