I'll just say I lucked out on the peeling of HB eggs : from refrigerator : 3 min LP steam , in a basket. rapid cool in cold water , refresh if needed until cool freezer until very cold. 3 - 6 min or so depending on temp membrane sticks to shell. gentile sqeeze while peeling for air pocket to move on down the shell quick swish in bowl of cold water : gets the few egg shell bits off easily drain ready to use or refrigerate until later. these times are from a cold iPot w one cup cold tap water. Ive found if Im using the iPot for several projects in series I try at lest ro empty the hot => warm water out of the insert a warm iPot takes less time to pop up the gasket , and reach LP thus those eggs , even if from the refrigerator might come out a bit different. Ive gotten some sensational jelled yolks this way just keep that i mind

  6. @Larry Sanbourne your best bet might be the microwave . I use a pyrex measuring cup , because of the handle it does not heat up for boiling water for drip coffee. if your ' cold ' tap water is a constant temp timing for both a boil , and a warm=up should be reasonably consistent.

    @dans these are Campari's , and they come from Trader Joes. there is a version of Campari @ MarketBasket , but over all the ones at TJ's always look a bit better . I keep them for several days , maybe even a week and always have two containers waiting to step up. a week or so ago , the Campari's at T's had some orange to them . I passed the recent purchase , Monday , was a deeper red. there seem to be at least two versions of Campari in my area : those that come from Canada ( MarketBasket ) , and those that come from Mexico TJ's at my TJ's come from Mexico : as commercial tomatoes ( the red tomato ) are brad for color the ones w a hint of orange are not going to be as ripe. TJ's , and Marketbasket have many other versions Canada ( greenhouse ?) and Mexico provenance Im happy w the Campari's

    @dcarch Id like to argue , for fun and entertainment purposes only with regard to cleavers and bones : lets argue the bone is round . a curved blade striking that curved bone initially toughest the round bone in one small spot exactly the same for a straight blade , on a rond bone. the its different for a flat bone : the curved blade does indeed exert its force on a small area where as a flat blade distributes the for along the entire flat blade to the flat bone. thus the curved blade gains a bit on a flat bone , not a curved bone so over all , the curved blade is better by 50 %

    @Tempest63 what you ( or a friend ) needs is a circulator the rest takes care of itself . if your friend has it you won't be hit over the head with it unless you visit. SV is a game changer for sure tough become tender @ 130 f ( 54.5 C ) said to be the minimum pasteurization temp.
