the book stands on its own. an award , any award , cannot change that. Awards perpetuate more awards. IACP screwed up badly. but the book has not.

@kayb that's close id never cook proscuitto nor older country hams but the others: after a really really long soak and simmer the only way Id eat ' ham .

@TdeV well its Ham , but intense in the best possible way. if you have only had ' store ham ' or Canned Ham as I had growing up baked w cloves etc this is much more intense if you want to try it, go to one of the above and get some vacuum packed slices it salty but you can soak in in ice cold water first. Mu Uncle , in Ohio used to get these and soaked them for a few days changed the water then baked them I was albe to stop by on the way to Job ! cooked , cooled and ready for snacks unbelievable it was.

@HungryChris so nice to see just before Spring congratulations Ive not nothing I so have a decent sized curved 'sun space' tile lined that I used to put herbs in and my tomato seedlings then over the winter the WhiteFlies and Bugs shoed up My sister sent me some USArmy non-taxed cigarets and I make Nicotine Tea and tried that as toxic as it can be I gave up glad you did not ! Mortadella [ no pistachios , please } ForeEver !

I think I mentioned way back in this topic or a topic about what your SuperMarket had both ready to eat or to take home and cook. my higher-end Supemarket Roche Brothers , a family chain in the BOS area and a fine store had both microwave packs and cook in your oven packs changed daily and ' fresh ' what Interested me about this is that a supermarket has Tons of fresh stuff packing that Stuff for home use , either in a kit or for your oven or your Micro makes a great deal of economic sense : if you think of economics as efficiency using a delivery service , UPS or what have you adds an additional cost layer one might need that but I was intrigued to see that a supermarket has 'Pick me up , and cook me tonight packs ' now we await The Amazonians to deal w this via WF.

@btbyrd how do you make the dash ? Ill freeze the bacon seasoning and use the fat finely chopped up in my turkey meat loaf which starts out 93 % lean. thanks for the tip on the shocks. they were very nice over the phone and sent the package on its way in a few hours. it too some time Im guessing to cross the road. the PC tip is a nice one. Ill try it in the iPot.

Fathers intrigued me I called and ended up ordering 2 sets of Hocks the fellow I spoke to will actually pick out big ones ! and a believe him. very polite. ( he was across the street ) and a 6 bacon seasoning sampler. I got the second Hock order as shipping is on par for Food , and it was minimal to get the second set of Hocks. Ill freeze them and That's That !

I also use sink # 2 , on the L of the larger deeper sink ( is has the dispose-all ) as a drip-dry tub It nicely fits a plastic coated metal dish drainer

I can't show you my spice cabinet because , well ........... but Id like to add something Ive learned in the last year or so Im fortunate to have a chamber vacuum sealer. Oil Pump. I get Bell's seasoning 2 weeks before Thanksgiving as the price drops dramatically and its fresh. but its ground etc etc so I put the ground spice in trimmed vacuum bags and seal I keep them in the freezer and open them when I need them and as the bags a longer on purpose I re- seek that same bag the stuff when I use it is as fresh as it was when I first bought it. now when I get my Penzies spices , the ones I know Im going to use as my main herbs and spices I by larger bags , as it ends up cheaper in the long run and vacuum seal them in the same way. one can take a large vacuum bag and make several long ones for this the length allows no - fuss re-sealing if you have a vacuum bag or chamber vacuum bag system please consider this as its well worth it id you have the vacuum systems already for SV

Its a bit of a shame Benton's doesn't make sausage their bacon and ham are first rate and they are a pleasure to deal with on the phone even just before Christmas during their busiest Rush !

@MetsFan5 if you have not had a Country Ham , why not consider a sampler pack ? Edwards makes good products. they are other places that are similar if not more Country-ish consider ; https://www.edwardsvaham.com/product/virginia-smokehouse-sampler/country-hams similar price , but some bacon and sausage to boots many people over look country sausage. It is a remarkable item to try sausage will be more variable from establishment to establishment. Im a big fan of Benton's they make ham and bacon no sausage

I have learned a Bitt from MB over many years mostly from PBS cooking shows and etc. He has always stuck me as intelligent and fairly lazy. I can give you a ref. to a PBS show where he and and another True Chef were making Soup to Nuts for dessert he chose to run out to a tree and pick a Persimmon. Just Saying. at least he is not as far as I can tell a Fellon like Martha Fellon. but he does enjoy from my view possibly mailing it in. just my take

@gfweb if short of CSkin consider rice-paper wrapper and won-ton wrappers. Test Kitchen did s show recently w buffalo cauliflower bites those looked very very good.
