  1. this thread seems to be a tiny bit dated which means the eG crew has sorted this out completely. I have an Excalibur dehydrator on the way. waiting for their tracking 5 shelves the Enabler's helped me on the Sale Thread. what are your favorite DeHyd books ? I'll look into them at my local library. I grew up in N.California with Apricot trees every where plums , peaches , nectarines , avocados etc here in NE best of luck on fresh full flavored fruit. and for a time I grew the Best Tomatoes bar none Im looking foreword to using the dehydrator for two very different projects : 1 ) drying thai bird and other green chili's as I like green more than red I can get these at my local IndiaMart not far from me I think Id like the GreenDried better on Pizza etc than red Id also like to dry Mane blueberries in season and the rear local fruit I can get. thanks for your help.

  4. @Smithy this might be the only one in the country not sure pic for review purposes and from the Boston Globe. this was a JCPenney's when JCP was at it prime. its a connected-to-the-maul semi independent building. its as large as a JCP's ever was. Ive just noted : there seems to be a third story that's not used for now. I sure can pick where do live , fine library system stuff to Ooogle and NotBuy near a very high end Maul ? " like those shoes Bespoke from London ? ' from John Lobb ? Step right in etc
  5. the Reuben is an interesting taste direction mine unsmoked is indeed Boston Irish boiled dinner however the lightly smoked CB Ive made would make an award winning Ruben Id say.
  6. @gfweb interesting what I made is what I consider to be CB. I grew up in CA and im wondering if there is an Eastern view that sees CB as something close to what Id call pastrami not necessarily great pastrami , but a cow what wandered in that general neighborhood.

Pics from Wagmans : up the escalator is Meat/fish/foods to eat / bakery. thee are at least 4 isles like this .2/sided w end caps like this : there are at least 4 if not 6 self-service island like this. two or more are Organic : make your Salad etc it was 10 AM and a bit early for a full sushi-trake out. the counter is twice this length. their prices are fair for the area. the long items on the lower right were 7.99 , and some kind of volcano salmon and V.Scallops. next to this there is a dumpling-bar , about this length service meat , much of the beef prime or Wagmans aged choice. unlike other stores in the area , the store aged choice is very clearly marked and you are not going to confuse it w aged prime which they also have. a tiny problem at another local store, as I see it. their meat prices from above are a bit better than that store. Vac packaged beef. my boneless SR's came from here yest, are are enjoying themselves in the refrg. sale sirloin strips , $ 5.99. there are 4 steaks / package , and individually vac'd but you buy 4. I can't say if they will cut you different ones I didn't ask. Service seems to be one of their strengths . 4 of the MeatGuys knew all about SV the slimmer steaks seem to be a bit thicker than the wider ones , and have more marbling. if I wasn't working on the SR , the package you see on the lower R would have had my name on it. there is plenty to look over and chose the marbling of your choice I appreciated the fact that the marbling of each of the 4 steaks in a sale pack is consistent. next week Ill look them over again and get a 4 pack to RB40 and SV. All packs are dated w how long you can keep them refrigerated etc. their sales are two weeks. there is a huge amount of stuff I didn't take pics of. took a look at their bakery and its very nice. they were sampling a pear-almond tort and it was superb. exceptional crust and lots and lots of pears. I didn't check to see if they had `1/2 sized torts just as well. I imagine that if you are a home baker you can make a better tart , but Id bet by not much. I studied their wine selection , and its decent , but Total Whine has much much more and its a block away. their large bottle of HighEnd booze are 1 dollar more than TW , i.e. in the 60 $ range no Macon Inge , my favorite from TJ's a standard Macon Village is probably $ 15 , and nowhere near a nice as the TJ's M.Inge which is of course not their fault. how Tj's stubbled on that wine Ill never know. this store very much changed the SuperMarket dynamic in my area , for the better. P.S.: no eel in the shush bar. I asked and was told that its on a non-sustainable list somewhere one last thought that might only interest me : the shopping cart escalators are obviously on the same incline as the foot escalators. somehow the carts stay level both going up and coming down this requires further investigating and of course of no interest what so ever , they have one of those Chi-Chi " Let us Cut up your Vegetables Bars, and peel that Mango you pick out. While you Watch ! "
  8. @gfweb I can't really say. the CB's I get on deep sale have that little spice packed in the pack which I do not use. I used to use it when the CB's were simmered long ago. Id say the ones I get taste more of Beef than Spice should you SV yours , try a cold smoke for a bit after cooking then re-bag and freeze or eat right then Id say mine taste like lightly smoked beef no spice. next year Im going to do 1/2 of my haul as Ive done this year and the other 1/2 w pastrami like pepper and spices the ' plain smoke ' CB I have is out of this world for sandwiches and not anything I can buy even at the new DD-Wagman's

I plan to stop by today. they have coupons that come in the mail possible once a month different than their weekly flyer. $ 5 off $ 25 excludes pharmacy says nothing about excluding Booze. they and TotalWine , really near by are going to do Battle for sure ! might post some Market pOrn later if I remember to take my iPod. its very clear to me that Bezo's Market in my area is going to notice a big dip in Traffic any food establishment in that Huge High End Maul might want to relocate.

Im guseing that the Above might have some slivers of GreeBells hopefully if this is correct you did not have any yourself and will forrest this in the future Good Eats to all of your friends who attend

  13. there is a new , huge Wagman's near me. opened this Am : https://forums.egullet.org/topic/156629-new-wegmans-near-boston/?tab=comments#comment-2152250 I got the boneless SR's for the first time and plan a SV experiment. first , a trim : right out of the package there was a thin layer of fat on two of them so I decided to pull it off the result is above then I decided to remove the silver skin as I would have on any other steak. I prefer doing more work int he kitchen and less on the plate. even though 48 H @ 130.1 F might have dealt withe the SS well : they are on a smaller plate w a lithe bath of RB40 and in the refrigerator for 2 days very lightly covered. More Later my plan is after the 48 hr in the refrig , SV 130.1 for 48 H with a brief PitStop at 36 H to check one out for tenderness. if all is good and I think 12 H more would be fine Ill debag that one and go the full 48 H for all three up in the air on having one @ 48 H for a SR dinner p torching or just rapid chill and freeze. very keen on the project.

The Wagman's puts WF and RocheBr to shame simply on variety , size etc. the organic sections are immense the sushi bar either eat or take out looked very promising their prices there are less than RochBro which recently re-farmed the bar in two stores near me from a Japanese concern. the people who now make sushi at those two stores know nothing about it and no longer carry Eel , my favorite. after the dust settles , at 7:15 AM today ( opens at 7:30 ) the store was quite full , but its so big there were no issues. Iv de-Packed the 3 SR's and have them resting in the refrig w some RB40 soaking in on a rack Ill give them 48 H then bag and repost in the SV section.
  15. @thurbers thanks for this info TE and PD are birds of a similar feather , or more like reptiles w similar scales. anything for a buck ? but it is true this is a larger oven so the Gang in China at least did some thinking. the Anova Steam Oven ? love to see it if they ever make it. they are at least a year late so hard to say.
  16. @thurbers very interesting it seems to be sold by a fly-by-night outlet Dimensions 14"L x 26-1/4"W x 13-3/4"H (26.15 lbs) they don't tell you the inner dimensions , and the above data make it larger than the CSO external dimentions 26 1/4 make no sense for W , so not a lot of effort has gone into the presentation. I can say for sure , but this looks like a ' call before midnight for savings ' sort of place. and personally , Id not touch anything w ToddE's name on it. with a long pole or anything else. but that's just me. I just noticed the extra rack dimensions this would fit a 1/4 sheet pan but the whole gestalt looks cheap and flimsy then I might be wrong.

Been to the DD wags. exceptionally impressive. the BS pickles above are much much better than Ba-T's many times in the past only 1/2 of the jar of Ba-Ts was crunchy BTW the DD-Wag sense out coupons 5 $ off 25 $$ purchase for 4 weeks and its good on their massive selection of Booze many prices quite close to TotalWine , which is near by.
  18. a new Wagman's opened this AM in the local Maul. its huge . two stories . has an escalator for your shopping Cart ! its going to put a lot of pressure on the two closest markets Stop&Shop and RocheBro lots of eateries , some you bus your tray by the selections and grab a table , some sit down interesting looking Burger Sitdown place and a fancier restaurant Sushi bar etc etc very good looking stuff and a vide selection of imported items also bulk stuff a la BigBox. their store brand looks very good for several items I noted , and is very competitively prices Fish looks good , which is saying something. talked to the butcher at the Prime Carving station. knew a lot about SV SortRibs are problematic in my area. expensive , and not very meaty at all here they had bone-in for 8.99 , but very meaty and not much bone I caved and got a boneless pack , 9.99 / lbs all their case meat is vacpacked. their meat sales are decent. Ill RB40 these three ( 1.78 lbs total ) for 214 then SV at 130 for 36 , try a slice , then continue to 48 if need be. they told me all of their meat gong on sale from time to time , one cut / animal / week. if these SR taste as good as they look , Ill line up when they go on sale. very nice looking vac'd sirloin steaks , 4 pack , on sale 5.99 not wußte as thick as I might like , but not thin either. will look at those later in the week. https://www.bostonglobe.com/business/2018/04/27/talkingshop/TSaCCorbAiEwCcTgVjKhOL/story.html note the Cart Escalator. they have a huge selection of prepared food of all varieties , and a similar selection of prepared but cook at home foods.   20. to be a bit more clear : the jus was from the SV'd batch that I then opened and did a cold smoke on they got re-bagged in fresh bags for the freezer after their enjoyment of the Smoke. why not , I had it ? and I think the jus added to the final p smoked TrBr's the second bag did not get SV'd just cold smoked. in your case you are asking if previous SV Jelly can new added to a new SV batcxh of something similar , starting from scratch. Id say yes. if your process is similar to the first batch you are going to add flavor to the new batch and get more Jelly after the SV for the next batch more or less like Old Fashioned Balsamic vinegar but w a moder tasty twist.

I am having and Outstanding Sandwich for lunch : there is TurkeyBreast SV, then lightly cold smoked this AM with a bit of the SV Jus added to the p smoked SV bag. very tender , juicy and perfect generic soft bread ( 19 grains ! from MarkeetBasket - not bing fooled myself ) brown bagged home ripened Tomatoe's on the Vine and MBaske leaf lettuce very very nice. ! for me close to as good as it gets BTW : Guess What's for Dinner ? [ed.: 73 F outside , 50 % humidity , No Mosquito's . all windows open etc ] thinking about some M.R. soon ! As Ive posted before : I boned out two Fz TurkeyBr and removed the tendons the SV's them at my usual : 142.5 or 6 hrs nothing new there Ive discovered this year that cold smoking both the TB's and the St.P's corned beef after the SV gave me outstanding results. those have been posted before here is a thing of Great Beauty : using the Weber very early in the AM for cold smoking 8 packets of TB's as before however this time I took a bit of the Jus from the packets : which I freeze and save for adding to Gravy one might note that 1/2 of the dirt cheap but very reusable container is missing I decided to add a large TB of the jus that came from 2 TB's i.e. 8 tied up TB's after SV I then froze them as in the past as delicious as these TB's are for sandwiches or reheat for a Turkey Dinner Ive noted that they are a tiny bit dry its such a small thing I hesitate to mention it tender , juicy these TB's are Ive just decided to take one out and have it for some TB's sandwiches now what is my point of this post ? all most all of the Jus that I added to the bag had been reabsorbed by the TB meat. interesting Id say and Im looking forward to some tasty and juicy sandwiches soon. cheers
