  5. Long time no see everyone! Winter time! 12 hour wagyu beef and berkshire pork belly, roasted garlic farro, smoked ham and pork-beef demiglace.
  6. Just had Byron's and it was delicious! Oak smoke is quickly becoming my favorite type down here.
  7. Been too long since I've posted. AMAZING stuff everyone! I haven't been using my smoker enough so... Baby backs, smoked maple beans, collards and mac n cheese. My roommates are spoiled. Yeah... time to sleep...

  9. Haha that happens all the time with me. I often tell people that sometimes it's dangerous knowing how to cook. Many a late night cooking session has happened that gave me the pot belly I have today...

  13. Been a challenging couple of months in life but I'm back. I did a dinner for friends last night but all I took a picture of was the first course. Girlfriend loves breakfast so it's caramelized onion cream out of a isi whipper, quail eggs, dried iberico and some honey oats. Figured those were breakfast flavors. Good to be back!
  14. Damn dcarch beat me too it with the new articles. I'd have to say 3D printing food is going to be the latest greatest thing especially for astronauts. And this is for Jason Perlow. Yes, that is me using a 3D printer...
  15. mm - I can't believe you had such a bummer meal at 2 of his places. It always blows my mind when a Michelin starred spot it completely underwhelming. Maybe when spots think they can do no wrong they get a little lazy. Need to have a star taken away to light a fire under their ass. Edit: -Salmon season is in full swing and that looks awesome.

  18. Costa Rica, Yeah man, it's just bland here. I always think that a country is much more happy when they're eating their great local cuisine but here...They're super happy and eat crap all day. Puzzling and can't wait to get back to the states. It's been a real eye-opener in terms of how spoiled I am in California with ingredients. Spring is here!

    Breakfast! 2013

    Some I made while here in Costa Rica Fried plantains and eggs. Pastrami and taro hash with eggs
  21. Some great fishing in Costa Rica, made some stew for my hosts and some new fisherman friends. Friend grows the greens here.
  22. Yeah I've been talking with my friend a lot about putting something together. Especially in this little town of Mal Pais people would flip for a cheap taco fills with flavor. Just offer one kind and sell out every day then go surf!
  23. Fed up with the lack of food in Costa Rica with any damn flavor I made tacos for a bunch of locals and they freaked out. "What is that???" "....flavor" Carnitas braised in papaya, mango and spices. Salsa fresca, natilla and kolrabi sprouts from the garden.
