I don't have a copy to read to find out under what situations a self-defrosting freezer is not the best for food. When the freezer coil is covered with thick ice, and ice is not a good thermal conductor compared with metal, it makes it hard to cool your food down quickly and efficiently. The compressor will need to operate longer, and that upsets the temperature balance between the freezer and refrigerator. As you know, it take a few days for a refrigerator to re-establish temperature balance between the freezer and refrigerator. When the freezer coil is covered with thick ice, it blocks the circulating fan in the freezer and cooling becomes uneven, or no cooling at all. For the freezers with buried cooling coil in the walls with no circulating fan, it gets worst. You can't even remove food that are frozen stuck to the walls. dcarch

Speakingh of duck wings, one thing that has puzzled me for years. In Chinese stores, you can find boneless duck feet. How do they do it? dcarch

Self defrost only cycles on by timer to just defrost the evaporative coil (which is not in the freezer compartment), which goes very fast, before your food has a chance to defrost. A frost free evaporative coil makes it very energy effecient for cooling. You get much more thawing when you try to defrost yourself. dcarch

The sophisticated combination of fascinating ingredients, the artistry of sculptural plating, the craftsmanship of details, the drama of ambient setting ----------- all are to be admired. There is always something new from you to be learned, imitated, may be to be stolen. When I stuff a fish I have always stuff from the belly, but your red snappers(?) are stuffed from the spine, which makes interesting presentation. For sure I will plagiarize the idea. dcarch

I grew both last year, not this year. ------------------------------------------- A very interesting way to enjoy fresh tomatoes, after all it can get boring making salads, salads, salads. If you have a way to cold smoke fresh tomatoes. Amazing! I have a hot/cold smoker. 4 hours, light smoke, at room temperature. dcarch

I think it will be very difficult, or may be impossible. 1. You got to start with true free-range chicken, not just cage-free chicken. 2. You got to have a pot of aged stock that has been stewed none stop for many years. 3. You have to have a wood fired stove that bakes and smokes. Seasoning is not the whole idea. dcarch

When a mechanical relay fails, it opens the circuit and cuts out the power to the heating element. When a SSR (solid state relay) fails, it closes the circuit and powers the heating element continuously. I assume all new circulators, like Nomiku, use SSR to control the heating element. I am very concerned with all these wifi apps remotely controling an appliance which has more than a 1,000 watts of heating. I am sure you can remotely call the fire department when somethiong happens. dcarch

The big blue berries are too big and too sweet for pancakes. They are too soft cooked. They are for fresh eating. Blueberries for many of us are too expensive. Don't waste them on panckes. The hardware cloth from HD is perfect for a blueberry sorter. Very easy to make. dcarch

I have no idea what kind of garlics are sold in the stores. I get peeled garlic for the convenience. I get elephant garlic as a vegetable. I get black garlic as a special ingredient. dcarch

Liuzhou, your other mushroom thread talks about soup. The best soup I have tasted was one make with dried scallops as one of the ingredients. Good size dried scallops here in NY I think is over $300 a lb. What is the price in your area? dcarch

Thank you everyone! There are so many wonderful recipes for tomatoes, but even just plain old salad is exciting. Sad thing is, in another couple of months tomato season will be over. I will never buy store tomatoes. dcarch

I have seen Dan Souza's other "Science" cooking videos. Just like this one, interesting, but far from being scientific. Which is understandable, he does not have a science background, just like the other main characters in the Test Kitchen, entertainers, none are trained in the business. I would think that the most important consideration in making this experienment valid is to absoultely make sure that the pan and the oil is at exact temperature for all the frying, otherwise the temperature of frying can be off by 100F from one to the other. No! the amount of oil under the steak is about the same, and the thermal mass is about the same. You don't have to use that much oil. Conductivity of fat is different, fat also prevents evaporation, the fat cap on his test pieces are all different. I would cut out all the fat for this experiment. dcarch
