    Cauliflower soup

    I made the cauliflower soup of Eric Ripert's book last weekend. It wasn't very good . He added dill which I thought overwhelmed everything. Roasted cauliflower sounds very good to me. Add lots of cream.

  4. The remains from my Red Hen baguette are now hard as a rock. Bread Crumb time. I hope yours is OK. Can we call you Tommy2 since you're playing Thomas Keller tonight? Happy Anniversary! How many years?
  5. The baguette from Red Hen lived up to the expectations. The inside was light and a bit sour, with a good chewy crust. My 10 month old son loves baguttes for some reason. I showed it to him and then went in the kitchen to cut it up. He started crying because he wanted the whole loaf. I agree with Kaufmans (I just drove by there and they had a sign which proclaimed themselves to be the Macaroon capital of the world ), but if I'm in the mood for rye bread I usually get a loaf of pumpernickel from the Baltic Bakery. Val's also makes good Eastern European breads.

Pickled Onions I use red onions with a light vinegar because the result turns a lovely pink color. 2 large red onions 1 c vinegar (distilled, cider, or white wine) 1 tsp salt 1/2 tsp sugar Finely slice the onions. Place in a colander and run under hot water for 1 to 2 minutes. Place the onions in a non-reactive bowl and add vinegar, salt, and sugar. Refrigerate for at least 6 hours.   13. Smoked Chicken Tostadas Serves 4 as Main Dish. This would also be good with smoked pork or beef. 4 Smoked Chicken Legs/Thighs 1 ancho chile 1/2 c chicken stock 4 garlic cloves 1/2 c tomato puree 1/4 c lime juice 1 T mexican oregano 7 T lard or vegetable oil 8 stale tortillas 8 T crema or sour cream 1/2 c pickled onions Sauce Remove seeds and stem from ancho chile. Toast the chile in a hot frying pan (no oil) for a few seconds on each side. Remove from the pan and place in a bowl, cover with boiling water and let soak for at least 1/2 hour. Place the garlic cloves (with the skin on) and let them toast for 15 minutes, turning frequently. Add soaked chile, peeled garlic cloves, tomato puree, oregano, and chicken stock to a blender. Puree until smooth and strain. Add 1 Tbs. of the lard or oil to a pan and heat over medium heat. Add the pureed sauce and cook for ten minutes. Add the lime juice and salt (to taste) Chicken Brine and smoke the chicken (Recipe) Let the chicken cool and shred the meat. Tortillas Heat 6 Tbs. of lard or oil in a frying pan. Cook each tortillas until brown and crisp (about 2 minutes). Assembly Add the shredded chicken to the sauce and heat through. Place a spoonful of chicken on each tortilla and top with 1 Tbs. crema and 1 Tbs. pickled onions ( recipe.) Keywords: Main Dish, Intermediate, Chicken, Mexican, Blender ( RG266 )

  16. A pilsner is a type of lager. Lager refers to the type of yeast and the fermentation temperature. Another great lager is Negro Modelo, a Vienese lager from Mexico. Dos Equis Oscura and Indio (don't think they have this in the US) are other good examples of this style. Here's a link to all the different types of lagers. It's a very cool site. It reminded me of another lager I like, Spaten Optimator (It's a Doppelbock). In general I like bock beers but know very little about them.
  17. My mother-in-law has a recipe for Detroit style Coney Island Chili. I'll try to get it from her. She cut it out of the Free Press a long time ago. I do miss Detroit Coney Islands, although I always went to Lafayette Coney Island. Detoit style Coney Island chili (adapted from Detroit Free Press): Coney Island Sauce::one half pound ground beef one quarter cup water quarter cup onion 1 clove garlic, minced 8 oz. can tomato sauce one half to three quarters teaspoon chile powder one half teaspoon Accent one half teaspoon salt Brown gound beef slowly but thoroughly, breaking with fork until very fine. Add water, onion, garlic, tomato sauce, chile powder, Accent and salt and simmer over low heat about 10 minutes or until mixture is well blended. Who would have known the secret was MSG?

  19. I've had Korean sweet/spicy chicken wings. What are these called? Yuke is definate yes. I love BiBimBap, have even been making it at home.
  20. My Mom cuts everything with a paring knife too. She has lots of gadgets but never uses them. One of my favorite gadgets is a salad spinner. My Mom has one but she still dries her lettuce in towels .
  21. Maybe we should start a thread on Korean Restaurants? A couple of years ago there was an article in the Chicago Tribune about how Korean food was the "unexplored" cuisine. The reporter said that one of the reasons was that the front windows were usually covered so you couldn't peek in. I find this to be true for me, I wnt to see what a place looks like before I eat there and it is too embarassing to walk in then walk right back out. If I went to a Korean restaurant what should I order? I've had Korean food in friend's houses but know very little about it.

  23. Germany is about 1/2 Catholic, isn't it? The Netherlands (not Holland) is: Roman Catholic 31%, Protestant 21% I guess we can throw that theory out the window.
