Cooking plans are Sous Vide, then finished on the grill, Beef Ribeye with Crash Hot Potatoes and a Salad for the two of us. We have both spoken with our mothers. Very happy and lucky to have them, and our fathers, healthy and still with us! Ages range from 91 to 84.

When pan frying, I add at least enough oil to the pan to come half way up the height of the protein. PS: After coating the protein in the bread crumbs, I let it rest in the fridge for 30 minutes or so, to help the breading stick to the meat during cooking.

Your oil should not be absorbed into the bread coating. Before you add your protein to the fry pan, toss in a few Panko crumbs to see if they sizzle. If the crumbs do not sizzle, the oil is not hot enough. When the crumbs sizzle, add your protein and when browned, flip and brown the second side. Most of the oil should still be in the pan. Hope this helps.
