Southwest Shrimp & Avocado Salad from Gringo’s Mexican Kitchen ~ Don’t let the photo fool you, this salad is large! I ate the first half at the restaurant yesterday and the second half, with some added cheese, was consumed today. Ranch Dressing on the side.

Last Thursday, my birding buddy and I had dinner at The Blue Onion in Weslaco. We were down in the Rio Grande Valley for the annual RGV Birding Festival and this restaurant was recommended by a long time area resident as a favorite with birders. 👍 She had the Shrimp & Feta Salad, while I had the Gyro & Feta.

A recent breakfast at the Harlingen Cracker Barrel ~ two eggs over easy/medium (runny yolk/firm white), hashbrown casserole and grilled catfish with biscuits and grits. The eggs were perfect and the catfish was delicious!

Pan Seared Marinated Boneless Chicken Breast topped with sautéed button mushrooms, crispy thick sliced bacon and lots of shredded Jack and cheddar cheese; popped in a hot oven only long enough to melt the cheese ~ My Take on Outback’s Alice Springs Chicken with Risotto and extra mushrooms

The one I visited this morning had Great Value brand whole milk in gallons, but not half gallons or smaller. I got the 2% half gallon.

My other main mugs: These were made by my brother-in-law and gifted to us. Since my husband does not drink coffee, both of the mugs are mine! I use these three mugs, in rotation, when I think I just want one cup of coffee. I had purchased the nuthatch and wren cups while visiting my sister in the Pacific Northwest and then a few years later found the chickadee cup in the Gift Shop at the Lady Bird Johnson Wildflower Center in Austin. This is a sentimental favorite. I saw the show when it visited Austin in the late 1990’s and purchased the cup as a souvenir.

My newest coffee mug and covered jar (for my sweetener packets); both items purchased from John Perry, one of the potters at the Ozark Folk Center in Mountain View, Arkansas.
