Merry Christmas Everyone! Keeping it simple here, too. Just the two of us. Tonight will be Sausage and Lentil soup from the freezer. Christmas Day will be snacky things at lunch time with dinner at 5:00. The turkey thigh is the only thing I really need to cook. I had previously frozen leftover potatoes, dressing, gravy and rolls from Thanksgiving, so they just need to be reheated. I made the hard cooked eggs a couple of days ago, so the deviled eggs will come together quickly. -

We took a Day Trip today to the Brazoria NWR and then drove down to the Gulf Coast and took the Blue Hwy. to Galveston Island for a late lunch at Nate’s West End. We satisfied our cravings! He had a Burger and I had the Shrimp Poboy.

Since your time is limited, perhaps there are preparation chores you can do to help prepare the food to be cooked the next day. I would ask whoever currently does the cooking in your home to give you instruction on how to make these preparations. Then when you have more time, you can help make the final dishes/meals. Good luck and have fun!

I forgot to put the lamb chops in the water bath, so we had pizza delivery instead. We will have the lamb tomorrow. Thin Crust Pepperoni, Sausage and Onion Delivery (with fresh sautéed Mushrooms added to my half)
