    Penne with Meat Sauce
  4. I had been visiting family in Arizona and New Mexico for the last week, so after my GF picked me up at the airport, we visited Abe's Cajun Market and Cafe for a late lunch and got caught up. I had their Catfish a la Abe's: Grilled catfish over rice, topped with crawfish etouffee, green beans, cornbread, and a side salad. And my GF had their Seafood Platter: Fried catfish, shrimp, oysters, crawfish, and stuffed crab over french fries and hush puppies, cornbread, and cole slaw. Neither one of us could believe how huge this platter was! She took home a very full to-go box.
  5. This is the recipe I use. I can't remember where I got it, but need to make it again soon: Black Bean Soup Servings: 4 Ingredients 5 slices smoked bacon, finely chopped 1 1/4 cups onion, chopped 1 stalk celery, chopped 1 medium carrot, chopped 3 cloves garlic, minced or pressed 1 cup chicken stock 3/4 cup chopped canned tomatoes with juice 1 Tbs tomato ketchup 1 tsp Worcestershire sauce 1/2 Tbs chili powder 2 cans black beans, drained, but not rinsed 1 cup corn kernels, frozen salt, to taste fresh ground black pepper, to taste 1/2 cup cilantro leaves, lightly packed 1 tsp lime juice Procedure 1 Put the bacon into a large heavy pot and place it over medium heat. Cook until it starts to give up its fat. 2 Stir in the onions and cook, stirring, until they start to turn translucent. Don't let them brown. 3 Stir in the celery and carrots and cook, stirring, until they have started to soften. 4 Stir in the garlic and cook until you can smell it, about one minute. 5 Stir in the broth, tomatoes, ketchup, Worcestershire, and chili powder. 6 Stir in the beans and corn kernels. Increase the heat and bring to a boil. 7 Adjust the heat so the soup is bubbling gently and simmer for 10 minutes. 8 Season to taste with salt and pepper. 9 Chop the cilantro coarsely and stir in. 10Continue to simmer the soup until thickened, about 5 more minutes. 11Stir in the lime juice and serve.

    Dinner! 2012

The meals on this topic continue to amaze! Thank you for sharing! Dinner last night: Crawfish Etouffee with Steamed Rice and a sprinkle of "Slap Ya Mama" Cajun Seasoning And dinner tonight: Grilled Beef Rib Eye and Onions with Steamed Broccoli Florets
  12. They really are delicious! It seemed almost every order coming out of the kitchen included a plate of those rings.
  13. My GF and I returned to one of our favorite spots for lunch yesterday - Tookie's in Seabrook. We both remembered to take photos, and even took them before we started to eat! The usual #99 Burger for my GF: A T-Bird Salad with Fried Chicken for me: And we shared an order of Mama Ethel's Onion Rings:
  14. Open and drain a small can of tuna and dump it on a plate. Scoop out a like amount of cottage cheese and add it to the plate, next to the tuna. Sprinkle the cottage cheese with Lawry's seasoned salt, to taste. Put a bit of tuna and cottage cheese on your fork for each mouthful, eat, and repeat until gone.
  15. Neat! No clue either, but jam or jelly jar?
  16. I didn't do much in the garden this year - just some parsley, oregano and chives - but our local Master Gardeners group held their Fall plant sale last month and I brought home a chile pequin. The plant was loaded with green chiles when I bought it and now they are ripening and turning red. I can't wait to try these hot little chiles in my cooking.
  17. Hi Elizabeth, thank you for doing another blog! As one of the curious, does the popcorn go into the soup?

Bruce - that looks delicious! I have a recipe for a similar dish that I haven't made in too long. Just need to get some red bell peppers. Thanks for the reminder!

I followed the recipe on the jar! ;-)
  21. My GF and I went to lunch at the Flying Dutchman in Kemah yesterday to celebrate her recent birthday. And we totally forgot about taking photos until we were driving away from the restaurant! Maybe we can blame the memory lapse on the drink we had with our appetizer! ;-) Anyway, we shared an order of calamari, then we each had a cup of New England clam chowder. For dessert, my GF had a slice of their chocolate chip pecan pie but I went for an order of french fries.
