Because my sons in law would raise unsuited hell if I didn't make it. It has been traditional since I acquired them. Before that. It was mashed potatoes.

Anyone thinking about Thanksgiving yet? My menu doesn’t allow for much n the way of substitution. Some old standards — turkey, dressing, cranberry salad, sweet potato casserole, mac and cheese, corn casserole — must be included, else the fam will foment insurrection (and not wash the dishes). But, perusing NYT Cooking’s Thanksgiving recipes, I found a recipe for shredded and quick-fried Brussels sprouts with lemon and black mustard seeds that sounded promising for the obligatory green thing, and a couple of desserts — cranberry curd tart and brandied pumpkin pie. Anybody got any better suggestions for a knockout holiday version of a green thing?

Two places which traditionally serve horrible food are hospitals and school cafeterias. I have seen exceptions to both, in small towns in the South. in West Memphis, AR, where I lived for a time, the hospital hired a local African American woman who had run a restaurant and done catering. I regularly ate lunch at the hospital on Tuesdays, the day she made chicken and dumplings. To this day (well, until five years ago when I was diagnosed with celiac disease), I have not had better chicken and dumplings. A school cafeteria in an even smaller town 25 miles away was one of two eating establishments in town. When the restaurant closed, those who wanted to eat lunch would do so at the cafeteria. I think the cost was $1.50, several years ago, for those who walked in off the street. They made rolls to die for.

I've eaten rattlesnake. I don't care for it. Tastes a lot like alligator or turtle. Closest thing in everyday stuff, I think, is dark meat chicken.

A friend posted on FB yesterday about smoking beef ribs. Which got me to thinking. Would it work if I SV’d the beef short ribs in my freezer, say, 36 hours at 135, and then smoked them for a couple of hours?

Since I don’t use a crust on quiche, and since we never eat all of a nine-inch one, I’ve taken to lining ramekins with parchment paper and making four indivual ones instead of one big one. I freeze them in the ramekins, pop out and remove the parchment, them vacuum seal individually and toss back in the freezer. 20 minutes at 325 in the CSO on steam bake, and they taste like just-baked. -
Red beans and rice. A pound of RG Domingo Rojo beans, a pound-plus of Andouille sausage, about a cup of ground ham, about a cup of diced roast chicken thigh meat. Tomatoes, green chiles, onion, Cajun seasoning. Chicken broth, bay leaves. Made a vat of it. It was wonderful, if I do say so myself.

FWIW, the seasonings seem to absorb better if sautéed before adding to the bag. So I’m guessing it’s a function of heat.

I have found that the same mix of peppers/spices I’d use in a stovetop prep come out a little muted when used sous vide. I compensate by adding additional seasonings when I finish stovetop or in the oven. ETA: I have never cooked, nor have any desire to cook, lengua, so I can’t testify to membrane removal.

Parboil, wrap in bacon, and grill.

I have can lights in the kitchen. I like them, and they provide plenty of illumination. A couple of corners could use some under counter supplements, but the CSO is in one of those corners and the coffee station is in the other, so it works as is. highly recommend the dimmable function if your kitchen is visible from other rooms in the house.
