  1. The first time it was probably more like 10 oz. I had a mini sandwich, John had his on a bigger bun. There was a bit left the first time and naybe 3 oz. was added to for the second sandwich, also on a bigger bun. There is about 4 ounces left from about 17 ounces of meat. Sorry I can't be more accurate.
  2. I am an edge cracker. I tried cracking them on a flat surface but it takes me more than one whack and I end up with a mess. I never have a problem cracking them on the edge. Very occasionally I may have a bit of shell in the egg but I just fish it out.
  3. I used super steam, 400F for 7 minutes. I made 3 sandwiches. I made 2 the first time and used 350F for 5 minutes. The meat, while warm, could have been warmer so for the 3rd sandwich I used 400F for 5 minutes although I think 7 minutes would be better. This smoked meat was amazing, nice and juicy. The place we bought the meat from is called https://www.seedtosausage.ca and they make everything themselves.
  4. I bought some thinly sliced Montreal smoked meat today and am thinking I should be able to heat it on a steam setting in the CSO. Has anyone tried this?
  5. @Shelby you are an amazing woman.
  6. The things you find out about on eGullet! Thank you.
  7. Actually, I still like Bridgette but I wish Julia could tone down showing off her pearly whites. It makes her seem...insincere..
  8. Where does one buy vinegar powder?
  9. I want to make some strawberry sherbet before strawberry season ends. The recipe I have calls for citric acid or malic acid. I have neither and beyond this recipe have no use for either. Is there something else I can use? I vaguely recall someone saying you could use a vitamin C tablet. Any advice?
  10. @Toliver Thanks for the link, I just finished watching it. Or rather, I skimmed through it as I will watch it with my husband once we have it taped. One question that comes to mind - he used potato chips for extra crunch and leaving aside the fact they are salt and vinegar chips, why not use panko instead of the chips and bread crumbs?
  11. https://www.wuesthof.com/canada/products/Product-details-3/tomato-knife-4105 This serrated little knife might be useful. While called a tomato knife, I have also used it to slice bread and it is a lot smaller than a bread knife.
  12. Thank you. We have it set to record.
  13. They aren't being shown on food network Canada.😕
  14. Good to see you are back home.
  15. Thsnk you. I'll try some again then. I'll blanch it and vacuum pack it which I didn't do last time.
  16. Did you blanch it first?
  17. A couple of years ago I stripped corn off the cob and froze it. We found it tough, and this was very fresh corn. But then, I did not blanch it first so maybe that was the problem?
  18. He and America's Test Kitchen both got my husband interested in cooking. And that's not a bad thing.
  19. Where's the milk?
  20. I too have learned to bring some warm duds with me to emergency. I have also learned that I can get warm blankets upon request and that (I don't know what this area is called but it's where you are put in a bed, hooked up to stuff and constantly monitored) that area has a fridge containing food that is actually pretty good and is available for those of us who get hungry.
  21. One night we had a social night in this building I live in and people brought various nibbles and wine. One person brought cheese cookies that were so good I had to force myself to stop eating them so as to leave some for others. I tried several different recipes but none matched those. They were cheesy, buttery nibbles. We have had a couple of those nights since but the cheese biscuits never did make another appearance.
  22. Alas, some of us have to make do with reamers.
  23. I've seen them here and bought some once. They produce very little juice for a lot of effort.
  24. I haven't seen this but then I haven't gone looking for microwaveable rice either since i gave given up on Uncle Ben's mush. If i saw it i would likely try it. Of the stores they list none are in Canada, at least not where i live. I checked on Amazon and the cheapest price was $13.08 and the price went north from there. So I guess I won't be trying it any time soon. Edited to add: I can order from their web site. For $41.22 worth of product, they charge $72.19 shipping.
