  1. I thought he must be on it as he's taken his site down.
  2. great post.
  3. It must be busy as I can't get on!
  4. I preorderd too. What do we get again, full content or extra recipes?
  5. why does he get all the good gigs. So when do we get to read the real/unedited Hayward version?
  6. I live in Blackpool, no-where is decent! There is only one quality butcher, Clarks in Lytham and he can't get me either Ox or pig. The only place I've found is catering outfit Althams in Morecambe, but I don't want an account in order to buy a minium order of a few cases.
  7. Thanks Joesan, I've read how to do it in the Fergus Henderson's book, he said when you brine they float out anyway. But still couldn't score any, ahem, head. What about Ox cheek?
  8. Oh I've tried that, trotters are about the edge of the known off-cut round here
  9. Most meaty bit of beef and pork I've had in a long time was braised gob. Anyone got any idea were I can source some from?
  10. refrigerate your stock first this allows the gelatin to bond and then freeze. there'll be enough gelatin in chicken stock already, just use a double cheese clothe or superbag.
  11. Let's drop the North/South qualifications shall we, the Eighties are over . Haworth's work is the foundation of my food repoitoire and has done more to progress my region than anyone, Heathcote definitely included, that I know of. And though I dislike the broadcast persona (but hey he's a man of the kitchen not some daytime Ainsley) , have not tasted that food, Anthony's food and philosophy exemplified what I thought the competition was about. I didn't think I'd say this before watching the regional final, but I wish the younger man won. (hope no one poisons my ferrets tonight after reading this )
  12. It has just pained me to see Anthony loose.
  13. wow, was 'working' late. Iplayer loading now. But that means the Olive Magazine theory of the published winners is wrong.
  14. tricook that is a very, very impressive version of the Duck delice, did you see it being done on his TV series Kitchen Chemistry a few years back?
  15. I can imagine them as a good pairing and rate Nigel Howarth implicitly; however thinking a tart with a side of cream a good idea in this kind of competition is complete folly.
  16. hahaha , That was a massively stupid thing to make in that competition, alien abduction or acid flash back?
  17. Nigel Howarth's Lancashire Curd by Leagrams is made by this man and is served at the Three Fishes My best mate is married to his niece. And that means free curd for me! (photo was taken at Thom's Manchester Restaurant Exhibition)
  18. I prefer the expression "like a wanking chimp in a safari park" than chippy.
  19. It's like that, but smaller, less stylish, poorer service and view So Erica, Gary and Thom voluntarily chose to live in Liverpool for three years! My gums are aching just thinking about that prospect ....and I live in the other 'pool.
  20. Being a nerd of Northern culture I'm currently reading Liverpool 800 - Character, Culture, History which I heartily recommend as it's a fascinating read. It is! Really. ←
  21. recipes are free at bbc food website http://www.bbc.co.uk/food/tv_and_radio/menu_norththree.shtml
  22. Went to Liverpool Panoramic for lunch today as it's my brothers b'day. Though it looks very nice, the people on the set course thought it was middling, taste wise. I on the other hand didn't. Went ALC and though I enjoyed the pressed terrine starter, my main of 3 small 'dublin' bay prawn and pig ear, belly and trotter was the worst main I've had in along, long time. Ditto my tangerine and chocolate ganache. Service was slow and confused, the communication between French service staff (are they supposed to make me think the food tastes better?) and clientele was evident in ear shot everywhere. The coffee we ordered didn't arrive so we asked for the bill and were given someone else's. When we got the correct bill, instructed them to take the whole service charge off, comprehension suddenly improved, we were repeatedly asked if we only meant half. As a viewing platform it's a great destination Spanielking, but I wanted great food and a good experience for my brother. Should have gone to that man on the Wirral (but alas it wasn't my choice).
  23. I've seen the volcano! what else you smokin?!
  24. Marc as the man with the Antigriddle tell me y'don't have the smoke gun?
  25. But If the word 'twist' is mentioned once more! Funk me!
