  1. i've carmelized them (by accident) and was quite intrigued by the results. you may consider doing this with a few.
  2. sri thai in hoboken. the *other* thai in hoboken, bangkok city, is closed on monday. sri thai is closed on tuesday. you can always thai one on in hoboken, any damned day of the week.
  3. there are no stars given to restaurants reviewed in the NJ section of the NYT. this is true at least for the last several years. has anyone seen an axe lying around?
  4. it's not cool. it's what the lady with the big yellow wand in the audience wants you to do. and yes, it's fun.
  5. just let us know what night we should come over.
  6. i went to a cooking demo with claudine and jaques. obviously we didn't get to chat one-on-one very much, but she had a very nice disposition during the 2 plus hours. she signed my book so i'd hate to think she's a nasty chick!
  7. east saigon is horrible. but, you know that now!
  8. i disagree. i think the dubbing is more than just dubbing. they use too many euphemisms that no doubt do not exist in the japanese language. they sound very spontaneous, and have been very consistent throughout every one of the shows. if you closed your eyes, you would have no idea it was being dubbed. and by virtue of the way the show is set up, you rarely realize it even when you *are* watching the show. i think the dubbing is quite impression. claudine seems to be a sweetheart. her dad rules.
  9. ok, seriously, i need some help... i'm having about 20 ppl to my house for the 4th. i want to feed them something besides burgers and dogs, but i'm having a hard time getting a plan together that would provide people with some good eats, while ensuring that i *don't* have to stand in front of the grill for hours while my guests are there. any suggestions would be *greatly* appreciated. i should probably post this on the cooking forum as well.
  10. Oh, please, please, please say that you are joking. i thought it was a brilliant show as well. i especially loved when the freakishly tall gordon would occasionally smack his head against a light fixture or low door frame.

    Garlic + salt = paste?

as adam suggests, the salt acts as a roughing agent, which provides enough roughness to sufficiently mash your garlic (or whatever else you're putting in the mortar). generally, salt will be added to whatever you're preparing, so, adjust accordingly. as emeril says, "you can't cook with your eyes". that is to say, you gotta taste as you go along (to adjust the saltiness).
  20. huh?

probably a punch in the mouth!
  22. *only* liquor stores sell beer in NJ. you see, NJ, unlike most other states, realizes that booze is booze. all wine, liquor, beer, port, schnappz, boone's farm, NyQuil, is sold in something we called a "liquor store". sometimes they name themselves "wine shop" to suggest that they focus on one thing or another, err, in that case wine. we also have drive-through places where you can buy beer. i'm not sure, but i think maybe these only sell beer. but they are few and far between. in fact, forget that i ever mentioned the drive-through places. that's just confusing the whole thing. welcome to NJ, where consistency prevails, almost all of the time.
  23. yahoo tells me this: Economy Wine & Liquor Store (732) 634-1244 79 Main St Woodbridge, NJ 0.1 miles from the restaurant Alchar Liquors Inc (732) 634-0828 297 Amboy Ave Woodbridge, NJ 0.3 miles from the restaurant hopefully the restaurant can be more helpful.

    Crazy chefs

absolutely. the restaurant industry is certainly not unique in that aspect. this is a much broader issue.
