  1. i've often bought many and froze them. however, freezer space is at a premium. if i did that with everything that i wanted to (frozen herbs, sauces, stocks, etc), i'd need another house. Whole Foods in ridgewood has plenty of their products, including mountains of fresh and smoked duck breasts. they don't always have legs though. i can't help but think they don't order enough. i'm going to call them and tell them my name is Steven Shaw, and that i'm a very important food writer who wants confit legs. that should do the trick. john, the legs last quite a while in the fridge, but they do crap out after a while. and, again, i don't have a lot of room to store stuff. that's why god invented all of these wonderful gourmet supermarkets.
  2. and there's Hot Dog John, just in the nick of time. so you'll be in the times! that's very cool. i'm looking forward to reading about a nut's passion for hotdogs.

    Panko

i don't know about interesting, but i use panko to add "crunch" to sashimi preparations.
  4. your excuses are starting to wear on me. i want duck fucking confit and i want it when i need it. now do something about it.
  5. that's odd, as the product most likely has a long shelf life.

    mai tai

i just made these for a party and they went over pretty damned well. 3 parts light rum 1 1/2 parts dark rum 1 part orange curacau (or any orange liquor) 1 part amaretto (or any almond liquor) 2 parts orange/pinepple juice or pineapple juice 1 part fresh lemon juice this is a *very* strong drink. i added a lot more juice.

    Turkey Burgers

i mix a lot of ground beef with mine so it doesn't dry out and has good flavor.
  11. yes, and it's easy peasy too, as i see here.

    German rieslings

that's the type of thing i like to hear.
  13. money is no object to me. my time is worth more than the pennies a lb i'd save. you people can poop on my thread all you want. all i know is that it'll be here for me to reference and add to. my evil plan will work at all costs.

    German rieslings

we're looking at one of the big reasons why so many are afraid of german wines.
  15. i don't plan to "be by" a newark warehouse in the near future. for the sake of argument, let's say that i don't want to make them, and i'm not going to. m'kay?
  16. the problem i'm finding is that not all of the stores carry the product.
  17. i missed that bit. that's just poppycock.
  18. we've had a thread or two on this (recently even). if you want a poll of experts, perhaps we should voice our opinions. cursory reading of this thread suggests to me that this particular group of experts thinks that a good website is a good thing, and might even be a part of the decision to visit a restaurant. also, an expert just PM'd me, and another emailed me agreeing with me. so there you have it. i'm right.
  19. the nice lady at d'artagnan tells me that the following usually have their products: Pathmark Shoprite A&P Wegmans (doesn't help me in northern jersey) She also noted my suggestion of having a list of retailers on the website as she thought it was a "great idea." hopefully they'll at the very least add a list of chains that generally carry their products.
  20. it's one of my favorites in ridgewood. i generally like it better than 28 oak, certainly latour, and zarole as well. it's a little less well-known, that's for sure. they're not blazing new trails over there, but you can get a decent meal in a pleasant atmosphere with friendly service.
  21. I realize they're not 24-7. In the past (at least locally) they were FoodTV from 6:30AM to 3AM PST. When I got home tonight it was back on. It looks like they're matching my area with what they're doing everywhere else in the country. good. sounds like they were just fuckin' wit ya.
  22. to go back to what EJ said, and to what i think Rail Paul may have mentioned elsewhere, they're not at 24-7 network. are cable companies cutting it back even more?
  23. i'm confused. are "professional cooking schools" accepting just anyone who shows up with a check?
  24. bring duck legs...and wine.
