  1. I am having some of the fruits on top of chocolate ice cream for dessert tonight!!! I feel part of making a superior black cake is to do a quality control check of the soaking fruits on a regular basis
  2. I sliced one up yesterday ..raw...mixed it with cold roasted chicken, lime juice, red chile, a packet of Sazon a little mayo a little sour cream and a couple necterines and one red pepper diced up I love it raw best. gratting them into a slaw is wonderful
  3. Yes it is horchata I found that out after the laughter stopped! the one thing I did with the chicha de arroz was to use Crema de arroz they have it in Hispanic markets it is very smooth rice powder/flour that I think may have been precooked? it works perfectly .... for the pineapple just use organic ones if you can or wash the other kind really well then strip off the skin and drop it in some rice milk and simmer it slowly then add some sugar to taste and chill it down awesome drink... the skin of the pineapple it gives off a wonderful essence of this fruit ..you can not get any other way .. I also do this to make arroz con pina you just drop the skins in boiling water when you have the flavor you want (15-10 min or so) strain off the pineapple skins ..cool the water down then make your rice as usual fantastic rice!
  4. Oh Yummy yum..sweet tamales and a mug of hot mexican chocolate. I thought I was in trouble when HBK wanted to know about sweet tacos then it came to me.....How about a nice warm corn tortilla filled with picadillo? ← I am at work reading this and thinking of how hungry I am ..yummmmmm the taco trucks were all around on the way to work the sun was out they had folding chairs in parking lots and I was just thinking about this thread...
  5. I have had fresh shaggy mane mushrooms deliquesce. none of my cubes are over a year old I dont keep them that long I keep the fish and prawn ones in the fridg but I dont know if that even matters I think it is just in my mind it does I bought a new Prawn cube today on the way to work at a Vietnamese market I can not wait to try it!!

  12. thanks!!! actually..they are salty cubes and I love the packages ..but I do use them and am so sad I did not save the package of the curry ones because I really want them now! they taste different I promise! the Italian fish and the Mexican fish and the Asian fish cubes are worlds apart ..then there is the break down of the Asian ones to Chinese cubes, Vietnamese cubes, Thai cubes and then you have the cubes from Japan...the Hispanic cubes have sub catagories of more Mexican style and Caribbean ones like Cuban/Puerto Rican style cubes... Eastern European cubes ..Western European An ENTIRE MIDDLE EAST of cubes I have even seen cubes from Somalia!!!..everyone has cubes!!!..I could go on... I live in the land of Absurdia..how did you know? honestly it is a very serene and wonderful place
  13. medium rare ..seared salty, crispy and dark on the outside...top on a hard roll with peanut butter (chunky Adams) and crispy really good smoked bacon, tomatoes and dill pickles orrrr cooked the same way in a sourdough bun with fresh roasted NM green chiles, tomato, avocado, sourcream and jack cheese I am a purist as well I never really liked them for years ..now I have grown to purely love hamburgers!
  14. I have never one single time had anyone say anything about my cubes! I have been mostly to the Caribbean, Canada, Mexico and Central America no one cares I just pack them in my bag and they never even make the declaration minimum!!! so I have $10 of bullion cubes? they are so processed and mostly salt anyway ... the packaging is really cool as well because they totally "represent" I am so glad I started this because I bet you guys find all kinds I have never seen!!! I am trying to find the picture of the curry cubes I may not have saved it ..
  15. I have used a trash can (looks just like AB's ) ..smoker for years and it works perfectly!
  16. when I was in Panama I was having my fish filet and wanted to keep the heads and bones for stock at the fish market and kept asking for the" caballos" instead of "cabesas" (sp?) horses instead of heads there was plenty of laughter and pity for me and my puzzled face I got an extra fish out of the deal!!!
  17. "OHMYGOD Hummingbirdkiss!!!! You like posole and Menudo???? I'm in love Come to me my love....we will make such sweet tacos together........." chefsteban: Yesterday, 06:03 PM YES!!! 18. sigh I am amongst friends here how cool! I have not seen the Knorr Onion Cubes!!! I must find them! I will take pictures tomorrow... silica gel packs huh? far be it for me to say anything about anything anyone else saves! I am sure they work they do suck humidity out of things! but once they are done are they done? can they not absorb so much? believe it or not until this month(we have been really muggy) here we have not really ever had much humidity! Suddenly it is thick and no one knows what to do with it ...maybe we all need to stock up on silica gel!
  19. I can not imagine a better looking dish!!! it is fabulous!!! thank you for sharing!!
  20. Ok the rain needs to stop...I put all my house plants outside and they love it ..but I don't ..this is supposed to happen in May and June not at the end of July! I have a mold garden growing in my house...I put the ac on just to get the stickiness out ...makes me think of back East summers not western Washington summers!! we are not used to humidity here! and it is so freaking muggy!!! there is supposed to be a break this weekend I will stay positive ..and my garden does need attention deadheading ect ..badly!
  21. OMG I would have never known that was soy milk!! how funny I have never had that happen I have made tofu ..soy milk all kinds of soy ... funny funny thanks I could not wait until my lunch to see what this was... my life is so exciting!!!
  22. when I lived in Panama my friend used to boil cut up the kernelless cobs in whole milk with a little sugar (she used the dark cone sugar but brown works fine) then added some vanilla and chilled it until it was very very cold it was really very good she called it "chicha de maize" (sp?) there were chicha de arroz (ice cold rice water with milk vanilla and sugar) chica de avena (oatmeal and milk drink same thing) and fruit chicha's of all kinds actually I loved the pina that was made with pinapple skins and rice water with milk...sometimes there was cinnamon in them .. when I went to Mexico and ordered a "Chicha" (thinking my grasp of the language was near perfect at that time ) .....I got a very strange look ..my friend was rolling on the floor laughing because a "chicha" in Mexico is NOT a cold drink! anyway back on topic ..try this! it is summer and this is nice drink I promise!
  23. I am so happy people like cubes!!! they are great gifts even when people look at you funny they come back and tell me later .."wow I had no idea these are really good" then they will get me some and the chain continues .. it is a safe addiction! I will post pics of some of mine when I get time ..I am at work now if anyone ever sees the Knorr curry cubes please tell me I wish I had gotten a case of them last time I saw them ..they are very good
  24. I love cold noodles! my favorite cold Asian noodles have to be the Korean style ones... I just love ice cold kimchee sesame oil and seeds mixed into buckweat or shirataki noodles... Chop chae is great food for a potluck.. glass noodles, sesame, green onions, beef, black mushrooms ..I make this one all the time there is also a ..the ice cold ..very popular in the summer Korean soup (that I can not remember the name right now ..argh.I am sorry) ..the broth is served so ice cold it has ice cubes in it...very chewy noodles ..micro sliced beef and veggies on top .sometimes a sliced hardboiled egg...served with white vinegar and mustartd....it is a refreshing endless slurp! ...I love that soup! in fact I am due for some now ...and this thread is inspiring me... so I will go have some this week and then come back and make it
