  1. Nitrates add to corned beef flavor and texture for sure. eG has a lot of curing pros...looking forward to comments
  2. looks unstable
  3. Ever try adding a little vinegar instead?
  4. My mini prep runs at 75 dB... like "noisy traffic" says the app

    Aldi

I find Duke's too eggy. Not bad, just assertive.
  9. Pretty damning if even half true (which I suspect it is about right). I'm not sure his vision was achievable on the scale he tried to execute it. You might pull off utopian cooking on a small scale.

    Fried Polenta

I let it sit on a paper towel for a while and popping is minimal
  12. @JoNorvelleWalker "I maintain that until the water was boiling the beans were experiencing little or no cooking, even if the pot were hot." How convenient.

    Favorite Risotto?

I suspect its braised beef cheek atop risotto. I do something like that with duck confit tossed in reduced balsamic.

    Fried Polenta

Restaurant fried polenta is golden brown and tastes like polenta, but better. My fried polenta is light tan and tastes like a corn chip. I've tried dusting with flour or sugar, deep frying, pan frying...all the same. Anybody know any tricks?
  15. I have an alleged Early Girl that is growing like a mother. I'm pruning and trying to get light to the rest of the garden. Meanwhile in the shade by the driveway a rosebay rhododendron has bloomed...Every July 4th!
  16. And there's milk too
  17. arugula
  18. Trout and char are both salmonids. The easy distinction is that true trout (eg brown) have darker spots than their skin color and chars(eg brook) have lighter spots. There are other distinctions like bone structure/scales etc. They all eat well.
  19. I've had no good experiences with Misfits and the other one. Spoiled produce, comically dinky fruits. Wherever the boxes are put together for the Phila area is no good.
  20. Lost of smaller seafood, my friend
  21. Don't think many fish can be hung. Can you get one with an option for cold smoke?
