Great thread. I some how missed it. I love ground pork. Especially in Chinese recipes. This crispy Pork stuffed eggplant is really good. My favourite meatballs are ground pork with basil and garlic.

I still had a small turkey in the freezer, bought fresh for Christmas and then stuck in the freezer after the accident. Left it in the freezer to defrost and then presalted it on Tuesday and roasted it last night for dinner. All the traditional sides. Dressing baked separately, mashed potatoes and gravy, rutabaga and Brussels spouts. Moe had a roast turkey sandwich with dressing on white bread for breakfast and I'm taking the same to work for lunch. The carcass and legs are on simmering this morning for broth to become soup, and the remaining breast and leftover gravy is destined for hot turkey sandwiches tomorrow.

Another dinner that didn't get made last night. Today's breakfast. Poached Eggs with Duck Breast . Finished with a green peppercorn thyme sauce. First time serving duck for breakfast.

I went back to check and looks like I haven't fed my starter since the beginning of September. Two feeds and it bounced right back. I used 60g of discard from the first feed and made a 1000g batch of dough along with 1 gram of yeast at 80% hydration. 24 hour cold fermentation and then left out of the counter to warm up for three hours before shaping into 5 baguettes and one ciabatta. Sliced the Ciabatta while still slightly warm because Moe wanted a few slices with just butter.

I had a late lunch and wasn't hungry so I didn't eat dinner.

Dinner for breakfast. Small prime rib, presalted on Saturday and didn't get cooked last night. Moe loves scrambled egg and roast beef with gravy.

I decided to try going back to work today. So dinner was simple. Made Moe a Spot Prawn and Avocado Cocktail.

I had intended to roast a small Prime Rib last night for dinner. But neither of us felt like it. Moe thought that he would like fish. So I grilled a piece of halibut for him on a cast iron grill pan and I grilled pork chop for me on the gas grill. Same sides for both. Potato gratin and broccoli. Going to make him the prime rib for breakfast.

I'm not a fan of fish, with the exception of Halibut. I love halibut. If fish is going to be finished in the oven, like the parmesan crusted halibut, regardless of pan, you only need to brown one side because once it is turned and placed in the oven, the other side will automatically brown. At 450°F, I find that 5 minutes is usually sufficient time. If the filet is really thick, a minute or two longer and if a thin cut, then a minute less. I do prefer my fish cooked and not on the rare side.

@Margaret Pilgrim, Thanks for asking. Hard to believe that it has been six weeks today since the accident. Finally well enough to go out last weekend with Moe to look for a replacement car. Neck is still an issue so still wearing a neck collar. And I have an appointment scheduled on the 14th for a follow up CT Scan on head and neck. Hope to be able to get back to work soon. Going into town later this morning for my booster shot. I had it scheduled around the time of the accident and had to cancel two appointments.

Three recent meals. Grilled Filet Mignon with mushrooms and garlic butter and oven roasted potato wedges. This was meant to be dinner, the night before, but ended up as breakfast yesterday. Chicken Soulvaki Cabbage rolls.

Dinner for breakfast this morning. Fried chicken with mashed potatoes and gravy. Chicken was done on the air fryer setting in the oven. Pulled chicken gravy out of the freezer. Ham and Cheddar omelette from the weekend.

I do the same thing with flour and either rice flour or corn starch. Both work. Including subbing beer for soda water when making halibut fish and chips.

@minas6907 Amazing bake. Your bagels are perfect. @JoNorvelleWalker, love the blistering on your loaves. @weinoo, Beautiful rustic boules. Since I'm still using the mixer to do the work, I decided to make a couple of loaves of white bread. Adapted my regular recipe and really happy with the results.

Most of the dinners I've been making since the accident have been simple. Meals that don't require much time or effort. This is a recipe I've been making for over 20 years. It's my version of the Chicken dish we used to order in a Italian restaurant when we lived in Sault Ste. Marie. The restaurant used Cornish Game Hens. Which I still do sometimes, but I just as often I make it using chicken breasts. Chicken Stew and Dumplings. Hungarian Goulash served with noodles instead of Spaetzle. Goulash was cooked in the Breville PC. And last night's dinner, Spaghetti Aglio E Olio topped with grilled prawns. Thankfully I still have spot prawns in the freezer.

@Smithy, the potatoes are simple. While the oven is heating up to 450°F, I peel and cut the potatoes ( I use russets) into wedges or cubes. Rinse in cold water and dry well. Add some olive oil to the hot pan. Toss in the potatoes, coat with oil and roast turning once or twice until golden, crispy on the outside and soft and fluffy on the inside. Season with salt and pepper or your favourite mix. Sometimes I add a few cracked garlic cloves in while roasting as well. Better late than never...... Belated Christmas Eve Tourtiere. Wasn't able to make the Tourtiere this year so I baked one for Moe yesterday. The week leading up to Christmas I had canned a small batch of the Chile sauce that Moe likes to have with his pie. And I had also froze turkey gravy to serve with it. Moe wants another piece for breakfast and then I'm going to slice and freeze the remainder.

@TicTacTry this plus adding some vinegar to the water. Can't do vinegar. I can always taste it and there are very few things I use vinegar for.
