  1. At least with KERA, it is mostly the weekends that are really messed up. I believe Cooking Under Fire will still be on Wednesday night (my cable box shows it on the listings but I don't know if it accounts for their fundraising versus regular schedule..)

    Funk....

    This could be regional 'funk' based on soil conditions. I've noticed in my personal collection of Texas wines that one can blindly identify many of the wineries locations based on the taste, specifically West Texas wines, such as Llano and Cap Rock have a limestone and mineral taste, or in the worst case, sulfur (this is very obvious with Llano where you can compare wines pre and post fire before they imported a lot of their grapes.) East and Central Texas wines have a piney, sappy undertone that is much more acidic than West Texas wines. I know many of these mineral smells trigger a natural aversion in humans because of their unhealthy or toxic effects (I'm not implying that a sulfur smell in wine means it is toxic, only that it has picked up the trace impression of that element during the grape's growth process.) This funk you are describing may be a person aversion to elements that are a reflection of the region. Are there foods or smells that remind you of the 'funk' you describe?
  3. I am another one who would never think of putting my good knives in the DW, especially my collection of Japanese knives. Some of these have bamboo handles (Suisin & Honyaki) and I would hate to see what a DW would do to it's beauty.

  5. I guess I'm one of the few people here who laughed during the whole show.. as one person pointed out.. it is Fox.. do we expect anything but pure sensationalism? Call me a cynic, but I don’t believe that a single one of those folks are really want-to-be chefs… I’m sure they are all actors- probably paid to push all of GR’s buttons.. I still want to see GR and Tony Bourdain in a friendly boxing match.. Fox's Celebrity Chef boxing.. two real working class chefs... not any of these nancy-boy, I'm a chef because I look good on TV types...
  6. I often say I will never again grab the handle of my favorite Lodge cast iron skillet w/ out protection or checking its temperature first…… Of course, saying and doing are two different things…
  7. Very curious why they picked and listed the blogs they did. What was the criteria for those choices? ← Maybe it is because I'm coming in on this late.. but eGullet is the very first link listed under the resources.. did they catch their faux paux?
  8. IMHO, just like Iron Chef, sometimes I enjoy reading these comments more than the actual show.. I'll probably be flamed for this but the two I hope win are Katie, for her cut through the BS, NYC attitude.. There is no doubt she would work her ass off for anyone.. Second is Autumn- for her respectful attitude in the kitchen and her ability to work under any condition without complaining (mostly..) As long as the prima donnas Katsuji and Yannick don't win, I'll be happy. The big winner on this, however, is PBS who is reminding people they have better cooking shows than the Food Network (IMHO…) I’m glad to see something fresh come from them..

    I've always wondered what the scientific basis for the milk soak is. Does this have something to do with the amino acids in milk?
  11. An alternative use: I worked with a small restaurant in a consulting job and they were looking for a way to bring people in and get them eating. We used a hidden oil diffuser near the entrance to attract people off the street (cinnamon and clove) as well as redirecting a vent from the baker’s kitchen to the street. We also added small dabs of essential oils to the sides of the candle votives at the bar, not so much that would overpower what the person was drinking but enough to stimulate the appetite for more than just drinks.

    I always enjoy a filet of salmon rolled around figs and wrapped with prochuto ham and grilled. Add a balsamic reduction and you’ll be in heaven.

  14. I happen to catch Anderson Cooper the very next night (after the first showing 3/6) while on CNN. I was FLOORED when he spoke briefly of his judging stint for Iron Chef, he said something to the effect of "hell, I haven't a clue why they asked me to judge! I don't know a thing about food! My diet consists of fast food!" At least he was honest, something rare at CNN..
  15. This just seems to me that the market is at work and filling the needs of the consumer; I don't see a problem with it. People demanding lettuce from Honshu results in those farmers being more profitable. I wonder how much money would be saved if the government stopped its research projects on eating habits and just let the laws of supply and demand run its course.
  16. You win... This reminds me of my entire trip to Paris last year when my Texas accent gave me away as an American (even though I speak fluent French).. The service (when I got service) was just as rude. It didn't change on the entire trip until I ventured away from Paris, then people were happy to see an American.
  17. Uno mas... This reminds me of one thing I like about ICJ; no 5 dish rule. Some chefs won by putting their all into 2 dishes. That is good time management.
  18. As a non-food related project manager, this battle frustrated me. In my work, being on time with a quality product is everything. I agree with the posts here about how he should have changed course when he knew time was running out. This is where I see there is sometimes a conflict in the food industry. The artist doesn't always care about schedules as long as they create art. The business person is all about schedules. I think this battle showed us a lot more than we are giving it credit for........
  19. I had a very bad experience last week. I posted a review on a local restaurant on tripadvisor.com.. http://www.tripadvisor.com/ShowUserReviews...yler_Texas.html (and here in another thread but he didn't see that) and last Monday I received an e-mail from the chef/owner threatening to ruin my local reputation if I don't take it down. He said "you wouldn't know high quality food if it slapped you in the face.. you should quit eating at McDonald's and learn what quality is... you are a cheap bastard who was probably looking for a free meal..."

  21. Even if it is, so what? Viral marketing is a legitmate form of advertising (and effective). In this case all parties benefit.
  22. If this is the Moscone Center then you are really close to the 5th Floor- one of the best restaurants in SF (its in the hotel Palamor). Also, one block over (depending on what part of the convention center you are at) is Annabelle's (sp?) Bar and Bistro (in the Mosser Hotel.) Simple but good. In the Meteron (across the street from Moscone) is a great sushi place called Sanraku.
  23. Eggplant- I cannot even smell it without getting physically sick.
