  2. Percy, Were the english muffins from Wolferman's by any chance? My sister just sent a bunch (6 different flavors) of Wolferman's english muffins to my husband for his birthday. They're great! Cleo ← Why yes they are !! So far I have only tried the original recipe ones, but I also have sourdough, pumpkin spice, rasin, etc. I agree that they are very delicious.
  3. Somewhere on this thread or in my blog I mentioned that having eggs for breakfast not only taste great, it is probably a subliminal way to rebel against my childhood deprivation of the same.

    Since this group seems to appreciate the pictures, here are some close-ups to compliment philadining's pics. I realize these images are larger than the regular ones on eG, but I wish someone had posted pics from their meal when I was browsing through the thread, so I think there may be another poor soul like me. Besides, the average image is still only 150K. The now classic Cornets of Atlantic Salmon Tartar Ahhh... the requested Oysters and Pearls Txomin Etxaniz, Txakolina, Spain 2004 The texture of this dish is amazing and will remain with me for a while. This wine was very interesting and I will have to find a few bottles. Anson Mill's White Polenta - "Castelmagno" Cheese, Shaved Alba Truffles and Brown Butter Jus Guy Roulot, Mersault, "Tillets" 2002 This dish would have been great without the truffles, but once it was topped with a generous amount of shavings from bigger-than-fist sized truffled kept in a mini humidor type box, it was just heaven. "Sole De La Manche en Rouelle Pochee" - Caramelized salsify, hearts of romaine lettuce and "mousseline de truffles noires" Guy Roulot, Mersault, "Tillets" 2002 This dish was well cooked, but probably the least memorable when stack against the other stars on this menu. Pan Seared Main Sea Scallop - Celeriac fondant, celery branch, black winter truffle filaments and Hobb's Shore bacon emulsion Guy Roulot, Mersault, "Tillets" 2002 The scallop was huge, but perfectly cooked and tender. The truffle was quite flavorful as well. Liberty Valley Pekin Duck wrapped in Savoy Cabbage - Sauteed Moulard duck foie gras, cinnamon poached Pruneaux d'Agen, garnet yam puree and duck jus Faiveley, Gevrey-Chambertin, "Les Cazetieres", 1er Cru 2003 The foie was firmer than any other seared foie I have had before and we were pondering whether this was due to the fact that Keller only uses Moulard foie, or whether it was seared with caul fat around it. The duck wrapped in savoy cabbage was tremendiously flavorful, yet tender. Snake River Farm's "Calotte de Boeuf Grille" - Pain Perdu a la moelle, Broccoli fondue, caramelized cipollini onion, matsutake mushrooms with Vinaigrette Bordelaise Luigi Pira, Barolo, "Marenca" 2000 This was another star dish in my opinion, bursting with quintessential beef flavor. The marrow bread pudding did not have as much of the marrow flavor as I had expected. Brie De Meaux a la Truffe Noire - Crispy Russet potato, garden mache and black truffle gastrique The cheese was quite pungent, the black truffle which were whipped in did impart some flavor, but the texture of the potato was probably the best element. Meyer Lemon Sorbet - Fluff, Vanilla Moelleux and yogurt panna cotta This was Meyer lemon sorbet for sure...what better way to clense the palate? Tentation au Chocolat, Noisette et Lait - Milk chocolate Cremeux, Hazelnut Streusel with condensed milk sorbet, pain ai lait sauce and sweetened salty hazelnuts Chocolate lover's dream dessert. Now I don't feel bad for sprinkling fleur de sel on my Twix . The condensed milk sorbet had a very pure, minimalist type flavor...very nice Vanilla yogurt "pot de creme" with a prune base Can't remember whether this was the actual order of this dish, but this was a welcomed way to calm the palate down again. Mignardises Pictured at pomegranate, bourbon and dark chocolate Enjoying the Wines Overall, I have to say that I found the wait staff to be extremely knowledgeable, flexible and obliging and deserved every penny of the included service charge and more. So, do I think the meal was worth it.....YES ! Compared to some of the "dining destinations" in Europe, this was a bargain. Are there places where you may be able to get more for your $$...probably...and I am willing to try them out too Cheers Percy P.S: Despite eating almost non-stop for 4 hrs and feeling bloated, what do true eGers do? Why walk over to Zabar's to buy some more food items and H&H for some bagels

    Alinka, biscotti looks great....I almost wanted to reach through the screen and try one. Is that Sturgeon in the previous post? Tonight's dinner consisted of some sandwiches and panini combinations I am experimenting with for an upcoming office pot luck. Chicken salad baby arugula and another version with with truffle and chanterelles Also made a panini of skirt steak with onion confit and skitake on roasted garlic sour dough bread I like the steak version, my wife liked the chicken...guess I will make both for the pot luck

    A few eGulletiers will be dining there tomorrow for the first time. Any suggestions on the 7-course vs 9-course tasting menus? Does anyone know whethere the entire table needs to go with the wine pairing or subsititions, if any? We are psyched !!
  10. Cut up a fresh pineapple Someone gave me these big, thick, delicious, gourmet English muffins as a gift, so I had to make... Smoked duck with chanterelles and egg on an a toasted English muffin.

    Got an opportunity to cook today, after what seemed like an eternity. Made some Prime Dry Aged NY Strip with red wine demi glace sauce, red bliss potatoes and fresh porcini mushrooms on chestnut puree

  14. Well, given that the size of the pic is 41.3KB, I would not worry about it. If the pic was 500K or over, it may be a bit slow for someone using a dial-up connection (if those people still exist )

    Nice souffle Alina !! Kathy, is that cake topped with Marzipan (....hmmm...marzipan)? I am catching up on my posts for the week. I did not have many opportunities to cook lately and the coming week looks bleek as well (Christmas parties and dining at per se coming up). So this is what I had sometime this past week... Moo Shu Pork Shrimp Pad Thai (minus peanuts...wife did not want them) Philly Cheesesteak The Pad Thai is home cooked, the rest is takeout

    Curried saffron butternut squash soup (with a dollop of sour cream) Chicken Tagine w/aged Basmati Rice Since I had the oven on, I slit a few small eggplants and stuffed them with coriander chutney

    Susan...that lamb looks good. A few days ago, I too made lamb for dinner. Lamb ribs (not from chops) 3 ways: (from the top) Tandoori style, Teriyaki glazed and Dry rub based. Each had their individual taste, but I prefered the dry rub and tandoori ones. Also made some beef ribs (with dry rub) Dinner sometime this week also included Crab Cakes Chinese Bun stuffed with minced pork(?)

  24. I have occassionally purchased sweetbreads at Wegmans and prepared them at home. Restaurants in the 'burbs which carry offer include Majolica in Pheonixville, Birchrunville Store Cafe and I think occassionally Gilmores in West Chester.
