There is an article on "Fragrant Feasts of Lucknow" in the current (October 2004) issue of saveur. Roohi
  2. You may also want to check out Chez Panisse Vegetables.
  3. I find that they have some interesting recipes on the following site: http://www.ndtvcooks.com/default.asp Some of the recipes are even from the Kashmiri Wazwaan book - which I received today I tried the recipe for alubokhar korma on the weekend and it was pretty tasty. Yum. Check it out.
  4. I have been buying vanilla beans from that guy on ebay for a few years now. His service is great and the product is fantastic. It is superior in quality to what you get in most stores and a lot cheaper.
  5. Wow. I didn't even know that people eat bhang seeds. Is it intoxicating?
  6. My fav way to make green beans is using one of Madhur Jaffrey's recipes. You cut the beans into 1/8-1/4" slices. Make a sauce by processing onion, garlic, ginger, tomato and turmeric. Then you fry the sauce and add some ground spices (cumin, corriander). In a separate pan, heat some oil and add whole cumin and mustard until they pop. Then, add the green beans and the sauce. Lastly, add lemon juice and salt and cook covered for 1/h hour. Eat with chapati. I had this for dinner tonight (with some seviyan for dessert).
  7. I can't wait until my copy arrives!
  8. Sleepy Dragon: How do you like the Wazwaan book? I just ordered it a few days ago but I couldn't find any book reviews. Thanks
  9. I had lunch there is early June and both the service and food were fantastic. It was also a great value ($20 I think for salad, main and dessert). I highly recommend it!
  10. You really need to think twice before tampering with the guard on your mixer. I work in the field of occupational health and safety and I am aware of many deaths and serious injuries which have resulted from inadequate guarding/lock-out procedures for commerical dough mixers. It may even be illegal to run your mixer without adequate guarding. It is where I live (Ontario, Canada). Please don't compromise your own safety or that of your workers because of an inconvenience. http://www.gov.on.ca/LAB/english/hs/alerts/i23.html
  11. There are loads of mangosteen available in Toronto, particularly in Chinese markets. Yum! They are legal in Canada. I first tasted mangosteen a few years back in Vietnam. I liked them so much that I wanted to bring some back for my parents to try. I carried a shopping bag full in my hand luggage. When I arrived at LAX (on my way back to Toronto) the customs officer told me that I could not bring them into the US. He was however nice enough to let me park myself in the customs area and eat the whole bag full before handing over the peels!
  12. Thanks for the welcome, Monica. I think that this site is fantastic and I enjoyed your articles, in particular. I think that khamiri naan are made with wild yeast as opposed to commercial yeast. The ones that I have had always have that sourdough tang. I was wondering whether to just try making them with any starter or if there is some special technique that is traditionally used. Roohi
  13. I love the taste of khamiri naan. How would you advise me to go about making these? Thanks
