  1. Indeed. They contain thermolabile toxins which are destroyed in cooking.
  2. Braised Chicken with Tea Tree Mushrooms and Shiitake. Also includes dried and fresh chillies and ginger. Darned good! Served with rice - of course.
  3. Oh. I love raw white buttons. Dressed with a lemony vinaigrette.
  4. Two mushrooms not to eat raw, but are fine cooked are Shimeji Mushrooms. This "Japanese" mushroom is widely distributed far from Japan. It is unconscionably bitter when raw, but this disappears when cooked. Pilose Antler Mushroom, fried chicken mushroom, or chicken of the gravel. Lyophyllum decastes. I have no idea how widely distributed these are but you don't want to be eating them raw. They can cause nausea, diarrhea and even liver failure. Delicious cooked, though.

  6. Lunch Best one yet. I received this message the night before from a dear friend who wanted to recommend a particular restaurant's delivery food. Translation: Lunch tomorrow. Braised Lotus Root with Pork Feet ➕ Chinese pickled vegetables* and minced meat ➕ cauliflower Soup: Huaishan bone soup "That'll do me," I replied. At noon this arrived. Top left is the soup Huaishan (淮山 - huái shān) is the name of a prized type of Chinese yam. Also known as 山药 (shān yao) or Dioscorea opposita. The pork bone based soup also contained goji berries and Chinese date. The main food is clockwise from top left. Stir fried greens with garlic (subbed for the cauliflower); Chinese pickled vegetables* and minced meat As always 'meat', unless specified otherwise, means pork'; rice; braised lotus root with pork feet. Everything was cooked perfectly. * The Chinese pickled vegetables are known in Chinese as 酸菜 (suān cài - literally sour (pickled) vegetables, predominatly cabbage). It is sometimes translated as Chinese sauerkraut which, I suppose, it resembles. It is also believed to be the origin of kimchi by everyone except the Koreans who insist they invented it without anyone else's assistance, than you very much! The fact that it is recorded in China centuries before in Korea is, no doubt, clerical error.
  7. I do have a high tolerance level for bitterness (developed in China) and only ever really noticed it in aging mushrooms. As for retaining colour, yes they will change unless you whip them out of the pan just as it begins to change. I'm mostly experienced with the yellow ones, but have cooked both pink and blue to my and my guests' satisfaction. But they are Chinese and appreciate bitter foods more. Also, I find the younger mushrooms retain colour more.

  13. Oyster mushrooms come in many colours from white, passing through yellow, pink and even blue before grey and black. They do tend to hold their colour when very lightly cooked and who wouldn't want to do anything other than lightly cook them⁈⁈⁈ Young specimens can also be eaten raw in salads, but taste somewhat metallic to some people. My local supermarket usually stocks 3 or 4 colours. My favourite are the 'golden' or 'yellow'. The choice of descriptor depends on which memberof staff is in charge of sign writing that day. They also sell the yellow ones dried and they can be crumbled and added to salads. There is no real difference between them in terms of taste, though.
  14. Yes, indeed. I was brought up on John West sardines and tuna. The over-100 year-old company built up a solid reputation in less questioning days. In 2010 it was acquired by Thai Union and went down quickly with many serious problems coming to light.

  16. Thai Union have a dreadful reputation for making statements later shown to be false. They have been named and investigated in connection with the slave trade and using child labour in the sardine industry. Studies have shown them to use harmful fishing methods. They promised full traceability for every fish in the John West line, but failed to provide that. All of this information is fully documented and freely available. Don't just trust their website.

    Okra is hugely popular in the South (of the USA). Gumbo is practically the state dish of Louisiana and New Orleans in particulr. The very word 'gumbo' comes from the Bantu word for 'okra'.
  19. 青椒肉片 (qīng jiāo ròu piàn) - Sliced Pork with green chilli peppers. 蛋炒饭 (dàn chǎo fàn) - Egg Fried Rice (a very good if simple one)
  20. The description on the app lists it as 香草, which is vanilla!!!
  21. The potatoes seem to have been marinated in garlic, ginger and soy sauce before being baked/roasted. I'm not sure. never seen such a preparation before. I've been puzzling all afternoon what that herb is. For sure, not rosemary.
  22. They were. Potatoes aren't really a big thing here, especially cooked like this. First time I've seen.
  23. This was a somewhat unusual but good lunch. Herbed roast potatoes Chinese style. Black truffle and wild shiitake soup. Damned good South African navel orange.
