  1. TallDrinkOfWater and I went last night, 45 minute wait was passed at the bar at Dahlia. Then we were seated, very fun communal tables- I like that, I know others don't. I love the space- it's small but very well used. We decided to just have pies- I had the clam pie and dayne had the special which was goat cheese, fresh mozz, proscuitto, tasted fennel seeds. We both LOVED it! The crust was exactly how I like it, crunchy thin but with thicker edges with a nice char from the oven. The seasonings were what we loved the best- you could definately taste the salt in the crust which made the pieces a bit addicting. There was not a piece left as dayne finished his and then half of mine!! We woke up thinking about those pies... seriously! going back- soon!
  2. I'm really glad you enjoyed it. ← I'm really glad you suggested it!!!
  3. tonight we started with martinis, pistachios, sausage and white cheddar for snacking then we made bacon wrapped roasted pork loin served on fig & parmesean mashed potatoes with a salad of green beans, radish and basil. OR bordeaux style Belle Rouge in the glass.
  4. rocky that looks obscene!!! LOL!
  5. Totally!!! Happy Birthday Chufi! lucylou95816 that stroganoff looks delish!!!
  6. Mia's officially my favorite restaurant in the area. I had the beef brisket tacos (how can you not?) and they were incredible. the peppers were roasted until literally sweet! and the salsa they serve is nice and spicy. Perfect last lunch for this trip. Thanks again!!
  7. had lunch yesterday at Peggy Sue BBQ which I liked and would totally go back to. I had the dry rub ribs with a side of beans and squash casserole. both sides were just ok but the ribs were good and the spicy sauce was very good. I didn't save room for the fried pies....next time! Last night dinner at Ciudad which I also enjoyed. I'm a bit spoiled by my neighborhood Oxacan (sp) restaurant but this was still very good. duck flautos, the mexican cheese melt and a few margaritas. thanks again for these recommendations! I'm off to Mias today for lunch before flying out. as said I'll be back in dallas again soon so I'll keep these and others in mind depending on the area I am in!
  8. Last night I had dinner at Central 214 which is at the Hotel Palomar. I sat up at the chefs counter which is always interesting for me. Very nice servers and staff here. started with a vodka martini and they brought over some bread with a little plate of olives, artichoke spread and butter. Then the kitchen sent over their Carolina rock shrimp cocktail done "louis" style. It was quite tasty with slices of avacado and a nice little micro green salad. I had the fresh fish special which was arctic char pan seared and served on a bed of israeli cous cous and a peanut sauce. it was great, a bit smokey and a bit spicy. I think there was chili powder in the seasoning. Had a glass of OR Pinot from 3 graces which was good but completley overpriced at $15 a glass!!! nice atmosphere also
  9. this morning was baked eggs with parm and fresh basil on top on grilled baguette. yesterday was green onion omelet with a bit of white cheddar, sour cream on top and some gorgeous thick cut bacon.
  10. Sandy it was a pleasure to meet you and to dine with you! We ate the dungenous crab salad before a picture could be taken and then little wedge on the cheese plate is quince or membrillo (sp). The red we had with dinner was Wa's own Cadence Winery but I'm forgetting which one! gorgeous photos!!
  11. we started with Jasmine's tonight with Aperol instead of Campari which I brought back on my last CA trip (can't find it in WA). served with pan fried checi with garlic and herbs de provence. 2nd cocktail was the same but made with tequilla- both very yummy and very easy to drink! then spaghetti with HUGE meatballs, mozzerella and roasted garlic toasts. served with a 98 beringer reserve cab franc
  12. I agree completely--though really, all of the croissants are great. I always buy a plain croissant, plus whatever else, because their croissants are the best in town. ← amen!!! croissant, pain au chocolate, savory tart, quiche......
  13. That sounds really great! I love a good Greek lunch. But I'm curious about the "craft" of wine. Is that a special size? Like a carafe, but different? ← LOL!!!! no it's like art...and crafts!! carafe or K raft if you are so inclined... sorry about that!!

    Confit Duck

jumping in late on this but the duck fat you don't want to reuse is any that has been roasting things or is the result from roasting- once you have duck fat (or any animal fat) at that smoking point it breaks down and isnt good for you. I think this info is in this thread somewhere as I remember Paula herself posting about it.
  15. had lunch with a friend at Lola yesterday- it was very busy and loud, fine for me but for some it might not be. really good service and my schwarma was excellent. friend had pork kabobs with smashed garlic potatoes which he seemed to enjoy. they have nice crafts of house wine now- $15 for a large one, we easily got 5 glasses out of it. maybe a bit expensive for lunch- $50 with tip for the 2 of us, 1 entree each and the craft of wine. but I do still love lola!
  16. Green Leaf in the ID is also right off the dearborn exit and is really wonderful for vietnamese food! I like baguette box too for good sandwiches
  17. great richard, thank you! although I'll only have a few meals this trip Dallas is now part of my territory so I'll get a chance to try these over the next few months I'm sure! I think this trip will definately include Mias and Ciudad!

  19. started the evening off with Last Word and Pegu cocktails (hey it's friday- 2 are allowed!) then roast rack of lamb with rosemary mustard crust on a bed of israeli cous cous and some baby bok choy sauteed in butter and evoo and then braised in a bit of mushroom broth 02 Earth leland single vineyard pinot noir inthe glass
  20. right you are!!! for this trip I'll be staying between Park Cities and Lakewood near downtown. I will have a car. Truely I love all foods and am just really interested in the best places to go in Dallas. Not nessisarily the most expensive but I've dined alone with a tasting menu and paired wines at Topo in Chicago so I don't rule out anything. Just the great places that you think stand out in Dallas as great meals- taco truck to 4 stars.... thanks!!!
  21. anything else?? I'm now on my own so especially any places that are good for solo. I'm staying at the Kimpton - anyone have any info on their restaurants? One is a trader vics and the other I can't remember the name. I know nothing about Dallas so also PM me if there are some "must sees" as I will have some time to peak around.
  22. martinis roast chicken, roast delicata, spring salad french burgandy life is good (with an oven again)
  23. Damn, does this mean I have to put away my lab coat when I do sous vide? Rocky ← No I think you look cute in your lab coat (enter evil laugh here!) agreed and as with most things everyone has their levels of distinction. to some who may not have ever had sous vide that may very well be considered molecular to them- then again if you've never had a properly made cocktail you may think vanilla stoli and soda is the creme de la creme!

  25. Wikipedia quote "French for "under vacuum", is a method of cooking that is intended to maintain the integrity of ingredients by heating them for an extended period of time at relatively low temperatures. Food is cooked for a long time, sometimes well over 24 hours. But unlike a slow cooker, sous-vide cooking uses airtight plastic bags placed in hot water well below boiling point (Usually around 60°C = 140°F)." edited to add that I don't consider sous vide as molecular gastronomy as it doesn't "change" the make up of the ingrediants yet just cooks them better in most cases resulting in a nice texture and flavor
