  1. I recently had a doughnut from Sullivan Street Bakery on 47th and it was ridiculously good.. Tasted eggy, yeasty, with powdered sugar and a vanilla cream... My mother, who is P-Dutch, told me it reminded her of the doughnuts she had as a child.. Fresh out of the fryer.. Before you get to excited the doughnut was 2.90 a piece and small.. But it was probably the best doughnut I have had in recent memory..
  2. For ceviche my two favorite fish are monk and blue.. I make these in a cream sauce spiced heavily with minced garlic, cream, and a little horseradish.. Soak the fish in lime juice for an hour or less.. Then take out and but in the cream with a little more lime juice.. Add the garlic, red onion, horseraddish, and then try to find the puffed corn that they use in Peruvian dishes..
  3. Treat tuna like steak.. Do capers, shallots, a little egg yolk for binding, make a dressing with shallots, banyuls, olive oil, and some cilantro..Let the shallots chill in the banyuls before adding the oil..

  6. I have done 85 degrees celcius and prefered it to 70 degrees celcius.. I think my cooking time was about 8 hours or so.. No scum to be found.

    Ming Restaurant http://www.mingrestaurants.com/ming.htm 1655 Oak Tree Rd Ste 195 Edison, NJ 08820 (732) 549-5051 I have been hearing about Edison and the Oaktree road section for the longest time. When I come to visit my parents, I always try to find interesting and new places to go with them.. But, going for Indian Food is a tough sell.. I figured Ming would be a nice introduction.. Chinese Food with a little Indian Influence.. There is always the safety net of Thai thrown in there.. We went for lunch and it was pretty good.. I felt a lot of the food was over sweet, drowned in sauce, and suffered from a common fusion problem.. Often times fusion has no soul, no history.. Success has many fathers, but failure is a bastard.. This food was a bastard.. Indian staff, Indian customers, Indian Decor, but Chinese-esque food.. Like Americanized Chinese Food, this was just Indianized Chinese Food.. And whats worse, I believe it was Muslim chinese Food because there was no pork or beer.. Sorry Chicken is no substitute for Pork.. Chicken egg rolls... Eh, whatever... Insert pork here! Good Dish with Indian Influence, the fried Cauliflower.. This was early on in the meal so I hadnt had my fill of sweet sauce yet.. This photo doesnt do this dish justice.. This dish was fantastic.. Perfectly fried fish.. Sauce was less sweet then the others.. Had a nice spice to it.. Favorite thing of the meal.. Mao Pa Tofu: First time had this dish where the sauce was brown.. I was also disappointed because many reviews I have read called this place Sichuan and Hunan.. So I figured this dish would be great.. The tofu was diced and small, the sauce was really thick and gravy like and brown as I mentioned.. It was ok but, overly sweet, and not firey at all... Had my choice of noodles with vegetable or chicken again.. The noodles were ok, pretty forgetable.. So this place is Muslim, I am assuming. The lamb has to be good.. I make it a point to go to as many Muslim restaurants in CHina as I can.. I stop at every muslim street vendor while I am there.. I love the way they cook lamb.. Well this is not the case here.. I asked the waiter what his favorte lamb dish was.. The Sizzling Lamb was his immediate answer.. I was psyched. The dish was average to bad at best.. The lamb was mushy, the sauce completely disguised any charachter this poor piece of meat might have had.. It could have been setian for all I know.. It was a shame.. Served in some type of sweet and sour sauce.. Yikes.. I dont think Ketchup is a big Chinese or Indian influence in sauce.. Best thing I had there was a Mango Lassi which was not called a Lassi but, a Mango Shake.. Lassi would have been too INdian and this place was errr Chinese.. The good news is, I finally made it to the Oaktree Road Section.. I will be coming back to try some of the other places, any suggestion would be appreciated.. I dont want to appear overly harsh. My parents liked there food and the little one at her chicken pan fried dumplings.. Lunch was 100 bucks, which seemed pretty expensive.. But the restaurant is very pretty, we sat at a table with a lazy susanne and it was comfortable..
  8. I was more talking about scenarios that are currently available, like the PDA's previously mentioned.. Are the electronic paper displays currently available now? I am assuming no, because I see no amazon link..
  9. Getting back to my scenario of a porch, a hammock, anything that is light by anything besides the sun would be considered artificial.. However you want to call it, looking at a screen doesnt set me at ease.. For example, have you ever fallen reading a computer? I certainly havent, but a book is better then a sleeping pill..
  10. For straight up information digital wins every time.. For sitting on a hammock, relaxing on a porch, sitting in your favorite chair, nothing beats the comfort of a book.. Written words, on a living breathing paper.. Not some artificially lit screen.
  11. Want to get my Aunt, at home, Thai cooking lessons or a Thai Dinner cooked for her. Anyone have suggestions. No half stepping on the chef..

Here's mine that I think works pretty well... 1 lb Applewood smoked Bacon 2 lb chicken wings or backs 3 Liters of water 1 Onion 1 Carrot 3 thyme sprigs 10 black peppercorns 2 cloves 1 clove garlic 1 star anise 1 tsp coriander ½ cinnamon stick Brown the bacon and then sweat the vegetables and spices in the fat for a bit, then add the chicken and water. I would estimate probably 2 hours of simmering but I'm not 100% sure because I've been using Heston Blumenthal's pressure cooker method for stock lately. If you have a pressure cooker, let it go for 30 minutes, take it off and let it sit until the pressure goes down. After straining and defatting you can either use it or clarify it, depending on what you're using it for. ← I add bay leaves and leeks.. But, thats pretty much my recipe.. I also use a 6 pound piece of double smoked bacon and no necks.. I then press the bacon, peel it, and then cover in a dry rub for another dish.. But that stock I then cook down and save..
  13. Dry Rubbed ribs for two days.. Sous Vide with smoked bacon stock for about 12 hours at 85 c.. Grilled the ribs for a couple minutes on both sides while applying a bbq sauce.. If I wasnt lazy would have hit it in the indoor smoker for 15 minutes.. The meat was fall off the bone tender and everyone loved..

  15. That is there version of coleslaw in the bag.. Its funny because I guess its traditionally served with this.. Several of the places I go to serve it like this..
  16. Guananica 301 elizabeth ave Driving by, I happened to see a sign that said "Best pupusas in NJ" above a small little restaurant.. Being that I am on a recent pupusa kick, how could I possibly pass this up.. I walk in and the place seems nice enough though, a little bare.. Not much going on in the display cases where signs labeling areas for empanadas were.. Pollo, Chicharrone, Carne, and Plaintain were some of the options.. Like most of the restaurants in town, the menu is really just sort of for display.. Sure you can order what you want from the menu but, it will take close to 40 minutes to get your food.. The real ordering takes place off the daily specials menu.. I order three pupusas.. Two Chicharrone with Cheese, and one with cheese and peppers. The cheese is something I have never heard of and do not remember the name.. It was something like Locozo cheese.. Sorry for the lighting.. Here are the three served with the coleslaw that seems to be popular with Salvadorian Food.. Here is the inside of the Pork and Cheese.. The pork and cheese were fantastic.. My only problem was the pupusa was a little soggy.. I really like the crispness of the pupusa pictured on a previous post.. They were really wonderful.. The owners, husband and wife.. Husband from El Salvador the wife from Nicaragua.. The menu however is pretty sparce.. As I was sitting, three different phone calls came in ordering this huge special platter.. From Chicharrones, to steak, plaintains, and rice.. It seemed like it could feed several people.. I wish them luck but, will stick with my people over at Migueleno..
  17. Ten minutes goes by and the girl behind the counter hands me a plastic bag with a steaming hot styrofoam container in it.. The smells coming out of the bag are just fantastic.. I still, at this point, have no idea what its going to be.. Its a little too light for fish, it doesnt smell like meat or pork.. If my office was not so close, I might have pulled over and eaten it in the car.. So here it is.. Wonderful blackened quail.. The skin is crispy and coated with this fabulous spice mixture.. Its sort of like blackened, put more complex in flavor.. It had a nice heat but, it was not overwhelming.. The meat itself was the best prepared quail I think I have ever had.. In fact, this might have been the best quail I have ever had.. And quail is something I use to cook weekly in my house.. Joel Rubochon's, Batalli's, Frank Stitts', they all were not as good as these puppies.. Rice was fantastic and so was the price.. For 8 dollars, you get three whole quail.. Now compare this with the single quail you get for 12 bucks around Manhattan and you can certainly see the bargain.. Love this place, can't wait to try more things..
  18. El Migueleno- (908)282-0190 124 1ST ST Elizabeth NJ Food from El Salvador, this restaurant has been open for a little over a month.. I think there is another branch in Union NJ.. I am not really familiar with food from El Salvador but, of course would love to be.. On the window they say they specialize in sandwiches and soups from El Salvador.. I asked the girl what is different about their sandwiches and they say most of the time it comes with lots of vegetables and french fries in the sandwich.. I think I made out long cucumbers too.. But she could have been saying something completely different Having a lot to do today and kind of just wanting to get lunch, I decided on grilled steak tacos.. Three tacos came on flour tortillas.. The tortillas were grilled and very soft.. The meat was charred nicely, of good quality.. Nothing too out of the ordinary, just done really well and for 5 bucks, its hard to beat.. Will go back and try some more tricky dishes soon..
  19. Hello, My name is Daniel and I am addicted to El Migueleno.. Started with a meat? and cheese papusa..(most likely pork) Also served with a coleslaw type mixture.. This was heaven! Also got a grilled chicken sandwich that had the same spice as the Quail from yesterday.. Fantastic.. I asked for no french fries.. I am learning that the put the kitchen sink in their sandwiches.. From fries, to raddish, and cucumbers.. Oh and a fist full of mayo..
