I thought about it, honest. I even went looking for the camera (and almost burned the d*^n cornbread) but I believe we left it at BIL's place last weekend. Sorry!!! (Can I steal the pics from your blog and post? )

They roll around the pan easier??? Seriously, I don't do that at home often either, unless I feel like hanging around the kitchen (it's a great excuse to get out of vacuuming) or for a special occasion. edited for crappy typing

Well, 3 cheers for Brooks' fried chicken recipe -- it was delicious. Moist, flavourful and ohhh that skin. It was virtually inhaled, there are a couple pieces in the fridge for tomorrow if they make it that long.....and I didn't burn the house down. I was pleasantly surprised at how well it came out, only one piece was slightly darker than we would like. We were frying in cast iron, using peanut oil (that's what was on hand) and no thermometer.

Will not be serving sweet potato biscuits with the chicken. Burned the s*^t out of them 'cause I was busy playing on eGullet. SO killing himself laughing and hoping it's not a portent of things to come....may find another use for that skillet shortly....besides making cornbread to replace the biscuits.

I will never again become immersed in eGullet while I have sweet potato biscuits in the oven. Can you say crispy? Have now resorted to cornbread for dinner instead and can still hear my SO laughing.

The last few times I tried to recreate the fried chicken of my youth, it wasn't the same. It was bland, among other things and didn't have that elusive 'something" that I remember. I don't remember if my mother used bacon grease or not, but since we usually had a can of it for cooking purposes, I wouldn't be surprised. The last times I made fried chicken, I didn't use that and used regular vegetable oil. The taste wasn't the same as that fried chicken from my youth. ← The fried chicken of my youth was only eaten down south while on family holidays. I still love it more than almost anything. The closest thing my mother came to fried chicken was Shake 'n Bake, but even that was better than my previous attempts. Think burned and bloody all at once! However, that was many years ago before any prof. training and not too much experimenting.

Fried chicken tonight it is. I will be using Brooks' recipe and hoping for the best -- I have faith, the gumbo recipe was awesome. However, I have only attempted pan fried chicken twice before, both times as a teenager, early twenties a number of years ago. Both experiences were horiffic....trust me. Just in case, I'll be serving the chicken with black-eyed peas, greans and sweet potato biscuits. I shall report back, providing I don't burn the house down.

Perfectly grilled rare to med. rare rib steak (the SO's contribution - omg, can that man grill!) fingerling potatos cooked in duck fat and french gr. beans with hollandaise. Yeah, a real lo-cal Sunday here.....but really yummy! Accompanied by a Chilean Cab. that was bought as a "good value" rec that we really enjoyed - Perez Cruz Reserva 2003.

Well then, kind sir, please post your recipe!!!! btw, in Canada you cannot get paper bags anywhere, except the liquor store -- the size of a wine bottle. Guess that's why the gov't wants to send trash to the good old US of A!

Great timing!! My SO just asked yesterday if I'd make some. Haven't done it in years at home, but here we go. I will definitely be frying in a cast iron skillet....now to go dig up an old recipe, or perhaps see what pops up here. Woo hoo, crispy bits o' goodness!!!

Dinner last night: enchiladas with salsa verde, beans and avocado salsa. Dinner tonight will be jerk chicken, rice and red beans and coleslaw. Visiting warm places via food.

Smoked chicken and roasted red pepper risotto with a salad of butter lettuce, green radish in balsamic vinaigrette. Simple, easy and yummy.

Wolf Blass has a number of different lines/varieties available in Ontario ranging in price from approx. $15 to $150. The LCBO website should list most of what they carry on a regular basis. (I can think of 15 or so just off-hand).

Mustachio's is my favourite sandwiche joint in T.O., bar none. I live for their eggplant foccacia sandwiche. The veal and breakfast egg ones are good too. If Rachel Ray ever does a $40/day show in Toronto, she had better eat at either Carousel Bakery or Mustachios, or she will hear from me! I usually find the corned beef the fattier, juicier meat, but that is only if it is from places that don't steam it to death. Mark ← Personally, I don't like Mustachio's at all. The fried eggplant is good on it's own but the veal is always incredibly dry and tasteless and I've definitely had better bread. As for Rachel Ray, it is my fervrent hope that she NEVER comes to Toronto! Mark, Centre Street deli will hand slice if you ask -- decent job of it too. (For take out anyway....)

Deli, andouille sausage and antipasti......what can I say, it was easier than a new topic??? Ummm, the discussion was going well and it can sometimes be kinda slow on the TO board??? Anyway, mea culpa. (Having said that, feel free to chime in with any suggestions for the above mentioned you may have. ) Mark, you are correct. I had the opportunity (misfortune?) to have a pastrami sandwich from the PB about 5 months ago.....it was awful! No taste, fat AND gristle, just overall yuk. Last time I had a smoked meat from Katz's on Dufferin i asked for hot mustard (Keene's, Colemans) and got sweet. It was god-awful and ruined the whole sandwich. I haven't tried Zuppa, but will soon. Off to visit a friend at York Central Hosp. later, think I'll have to make a detour to Centre Street after all this talk of deli.

You can occasionally get Bush's beans downstairs at the market. I prefer Heinz beans from Britain....again, harder to source. Nope, don't like Kwinter's. Haven't had Perls and hate all hot dog cart dogs. It always amazes me that practically everyone in TO buys dogs from the same couple sources. Hmm, maybe I should start importing Nathan's

Crawfish indeed! I, too, can't wait until they reopen. I'll try Grande next time I'm up that way, or feel like a small expedition (has to be one of the worst driving areas in TO imho) Gems for me would usually mean ethnic and/or hard to find things, restaurants included. I know all the regulars (Whole Paycheck, Pusateri's, the market, Kensington, etc and my other chef contacts) For instance, there's a little shop in little India (north side, beside Siddartha rest.) that does grilled spicy corn on the cob and this amazing little snack of dried Indian snacks, chick peas, potatos, fried onions and a tamarind and a spicy sauce. Great snack. They also have fresh sugarcane juice (have them add salt and lemon)
