    Dinner 2018

We were invited to visit friends who live on an acreage about 1.5 hours from us. Cindy was making East Indian food, so I offered to make appetizer - Moroccan Spiced Beef Cigars, which I hadn't made for a long time! Then the weather went all crazy...snowed since early hours of the morning, sleet, etc, which made for icy road conditions. We wisely decided to postpone our visit. Meanwhile, I had made the appetizers... Added a couple onto each plate of leftover Beef Bourguignon, mashed cauliflower, and peas, which eased the disappointment of missing a much anticipated Indian dinner! I also made a bowl of mango pudding. Hope the grandkids will be able to come up tomorrow to help polish off this big bowl!

Finally got around to cooking up some of the ikan bilis aka dried anchovy our friends brought back from Malaysia. Someone else has always cooked them for me, but I took the plunge today! Cumin lamb, coconut rice, a bit of bak choy, and ikan bilis and peanuts in spicy sauce. I was very happy with the results!

Can't remember who has posted Korean BBQ chicken a few times. Might have been HungryChris? I finally got around to cooking a whole chicken with Gochujang . The chicken was marinated with a mix of Gochujang, lime juice, brown sugar, and garlic. Roasted at 450F for 60 minutes produced a lovely flavourful and moist chicken! Night before, I cooked up some char siu in the oven. Eaten with pan-fried tofu and bok choy

Picked up a whole tenderloin on sale at Superstore last Friday - a special ar $8.77 / lb with 15,000 points ($15.00 ) Trimmed it up and in food saver for Beef Wellington at Xmas... Trimmings = Beef Stroganoff over Shirataki fettuccine. Picked up a couple Steelhead Trout fillets with a 30% discount and packaged them up between layers of Lemongrass, stalks of green onions, cilantro, ginger, lime, and Tahi lime leaves - baked in the oven - my favourite way to cook this or salmon.

Had to make Pickerel Fish 'n' Chips again for son and family. He thought we should have it for Thanksgiving...but I couldn't see myself deep frying for 16 people! Told him if they come home a day early, I'd make it for him. They did! One granddaughter, Oriyen the teenager, has been a vegetarian for about 2 years, so I made deep fried tofu, crispy sweet potato fries, and battered cauliflower for her. The rest of us had fish, chips, etc. Granddaughter River is 4 and she loves fish. I was pleased that these fillets were bone-free. All done, Nana!

    Dinner 2018

We have a group of 4 couples where the guys have been childhood friends. Every year, I host a dinner around Nov before one couple goes to winter in Malaysia. This year, we had it yesterday as it was one of wives' 70th birthday. I made her request - Paella. She had it for the first time at our 2017 gathering. I figured the pan was going to be pretty full, so I kept the mussels separate, steamed in white wine, Thai lime leaves, lemongrass, ginger and garlic. There was enough leftover for supper for hubby and myself. Dessert was Trifle. Jelly will forever be my "fails" whenever I have to use agar agar! When we were in Malaysia visiting our friends whose wife is Muslim, I cooked a thank you Chinese dinner for 25 members of the family. For dessert, I had picked up Thai mangoes on our visit across the northern border and was making mango pudding with agar agar instead of Knor's gelatin. I had forgotten that fresh mangoes (like pineapple) must be cooked so the enzymes will not affect the gelling. When I remembered, I took the pudding out and boiled it with agar already mixed in. When we were ready for dessert, the pudding pieces bounced like rubber balls! So this time, I made the jello layer with agar agar again. I didn't realize it would set in 30 minutes! When I went to the fridge to check it so I could fold in the fruit, it was, again, solid! My friends will forever remember my jello! But, we all enjoyed the trifle anyway!

    Dinner 2018

SO much good food! Loved going through each of the meals. Today, First day of autumn, as of 8 pm...It started with a drizzle of rain, and by 3 pm, driving sleet that turned into snow flakes! Temperature has dipped down to the -4 celcius mark. Turned on the oven today with a small boneless leg of lamb. Couldn't decide whether it'd be rosemary or cumin lamb. Finally marinated the lamb with whole grain mustard and rosemary (bush rescued from the snow!) and roasted potatoes with butter and cumin! There is so much garden clean-up to do this time of the year. Instant Pot comes into play - Thai Red Curry beef "Stew" Threw in potatoes, carrot, and celery for the veg to avoid using another pot. A good friend just came out of the hospital and had been on a liquid diet prior to a procedure. She is ready to eat real food again, so I made her one of her favourites...wonton soup Had lots of pork, shrimp, waterchestnut filling left over. Added diced shitaki mushrooms and Chinese sausage, and steamed it for supper.

Having tooth issues, so soft foods the last few days: Pickerel Fish 'n' Chips with curry gravy A friend gave me beets, already cooked, ventured into Borscht land The "Beet friend" is a potter and I love using her platters and casseroles. I can bake in them and platters keep the food hot...while I take pictures before we can eat. Her husband loves Steak 'n' Kidney pie but the rest of the family do not, so I made him a pie in one of his wife's casseroles. The whole family ended up eating the pie! Shepherd's Pie was also made in one of my friend's casseroles. Thought we'd have enough for two meals, then our son showed up...NO leftovers! A former colleague came for a visit tonight, and I made Paella - it was her first taste of this dish. I let her have the crusty bits Dessert was cherry pie!

belated happy Anniversary, Ann_T! It's our 52nd tomorrow...we'll be spending it watching the arborist cutting down a few trees in the yard. Will be expensive entertainment! Side pork ribs slow and low in foil in the oven for a couple of hours followed by a brushing of BBQ sauce and hot charring on the BBQ. Tonight was the first time I've ever tried black garlic. Bought a container in a Chinese supermarket and it's been waiting for me for many moons!! I just didn't know what to do with it (bought on ex-son-in-law's urging). Finally googled and decided to try it on something simple. I pureed 2 big cloves with olive oil, smeared it all over the chicken outside and inside., and roasted it at 375F for an hour. I was amazed that there was no garlic aroma or sharpness (hubby not a big fan of extreme garlic), but a sweetness! It reminded me of the soy soaked then dried olives (lam gok) my mom used to cook is a traditional dish for Chinese New Year. It was eaten as a lettuce wrap. We enjoyed the chicken. My hubby said it was a real meat and potato meal as I also made scalloped potatoes ('s been a long time!), which he loves - without onions!

Had two of our granddaughters ( 6, 3 )up for the day. They love noodles, so Cantonese Chow Mein for supper. Cool rainy day today, so I made Instant Pot Poblano Chicken, beets, and crispy naan bread. Cilantro was not found in 3 of my usual stores, but mint worked. I had cooked beets earlier in the day - 20 minutes in the Instand Pot.

My Mom used to dry the skin, then soak it in hot water before removing the pithy stuff. Then the peel was soaked in soy sauce for a couple of months. I LOVED the flavour and saltiness of the pomelo peel braised with pork.

Cooler the last couple of days at last! A few meals: Pork Larb and leftover Beef and Black Bean Garlic. Eaten with pan-fried tofu and lots of Thai basil Couldn't find the usual Steelhead Trout fillets, but whole dressed were on sale. Made slits on the fish, slipped in Thai lime leaves and lime slices. Stuffed the belly with lemongrass, green onion, ginger, cilantro, and more lime leaves. Laid the fish on a bed of the same greenery, wrapped in foil, and cooked the whole thing in the oven. Tried to make shredded tater hashbrowns...disaster... Really wanted lobster roll after our trip to Louisiana. Superstore had frozen lobster claw meat on for $9.99. Picked up 2 packets and used mini baguettes...Not comparable to fresh but supper was on the table! Was busy trying to assemble a new BBQ with hubby and cleaning up the gazillion crabapples from the lawn. A quick supper was required...Instant Pot Chili with spaghetti squash. Melted Mozza on top and a sprinkle of Habanero Lime...

Just got back from a 4000 mile road trip to Morgan City, Louisiana - celebrating the centennial of the making of the first Tarzan movie in the Atchafalaya Swamp. We were there with a gathering of Edgar Rice Burroughs(grandfather of sci-fi and author of Tarzan) fans. I just saw mention of gumbo up thread...some of our friends had great seafood gumbo, but hubby and I indulged, 2 evenings, on Royal Red Shrimp Boil (or bawld, as pronounced by the locals!). I've never tasted any shrimp SO good - flavour and texture of lobster, and huge! There were about 16 to the lb, and I couldn't finish my order. Didn't do any side trips this time, and I was missing my garden and kitchen... First meal at home- grilled tenderloin with new taters from the garden, carrots, salad, and sauteed mushrooms Tonight, supper was Black Bean Garlic Beef with Bitter Melon on Udon noodles

Had a recipe for Chili-Lime Clams, but clams were scarce in our little city this week. However, the mussels were freshly installed in the fish tank, so I went with the 2 lb bag plus a dozen little little clams. As I have an abundance of fresh Thai lime leaves these days from my own little tree, I threw a few in with the shallots, garlic, cherry tomatoes, etc. Had some large shrimp on hand. Peeled the ones for hubby and simmered the shells for broth instead of the cup of beer called for in the recipe. Didn't have any chickpeas, so I added diced taters. It worked. Shrimp were seasoned then sauteed in butter. All eaten with toasted baguette and corn-on-the-cob. Broth was amazing!

Vadouvan Curry Shrimp: Made this for the second time ever! Missing tonight's was fresh curry leaves. It shouldn't be an option as it adds a lovely fragrance to the dish! Also didn't have ground cardamom, but I had whole pods I brought back from India. Cracked open and chopped worked! I quite liked biting into bits of the seeds. Eaten with spaghetti squash topped with black sesame seeds and roasted ginger, sauteed beans from my community garden, and peas (from the freezer).
