Some dinners during this busy gardening time: Rice noodles, Char siu, bok choy New order of fresh pickerel fillets from Lake Manitoba: Fish 'n' Chips in beer batter. Curry sauce with fresh curry leaves for the chips! Pork Vindaloo with a potato and quartered onions in the Instant Pot and roti Last feed of halibut fillets that I picked up at Safeway 2 weeks ago...50% discount! Brushed with mayo and coated with Panko. Potato Patties are so easy to throw on when short on time to make chips!

Not as ambitious as Liuzhou with his wontons...but had shirataki noodles and baby choy sum on hand. The Thai basil also needed nipping, so all made a great lunch.

Got a line on fresh pickerel from lake Manitoba... Lightly dusted with seasoned flour (Old Bay) then pan fried. Cauliflower and asparagus were lovely and good price today, so perfect for a quick meal on a busy gardening day!

I use only ONE fillet...and it's the "meat" in between the "greenery" Bottom layer = greenery ( Cilantro, stalks of green onion, slivers of ginger, chili peppers, thin lime slices, Thai lime leaves, and bruised stalks of lemongrass, sprinkle of oil. Season fillet before piling on the greenery. ), then fillet, then greenery in reverse order:Lemongrass, lime leaves, lime slices...etc

@ElsieD: I sandwiched the fillet with : Bottom layer :Cilantro, stalks of green onion, slivers of ginger, chili peppers, thin lime slices, Thai lime leaves, and bruised stalks of lemongrass, sprinkle of oil. Season fillet before piling on the greenery. Top layer - reverse above Wrapped in foil and cook in oven @375 OR on the BBQ Here's what it looks like prepped.

Weather finally turned spring-like! Gardening takes time away from eGullet! A few meals: Steel-head Trout baked in foil with lemongrass, lime leaves, green onion, cilantro, ginger, chili pepper - eaten with roasted carrots and asparagus. Taiwanese Three-cup Chicken in Instant Pot Eaten with vegetable medley that needed using up! Tonight, I had ground beef thawed and wanted chili or spaghetti sauce. No tomato sauce or paste on hand, but I did have a jar of antipasto and some red kidney beans. Threw in dashes of Lee 'n' Perrin sauce, Matanzas Chili Spice Blend ( from a visit to Grapevine, Texas) and smokey chili...and it was great! Eaten with spaghetti squash for me and low-carb black bean spaghetti for hubby. Loved all the food eGulleteers have been posting!

Quick supper tonight 'cos my back was killing me...and I haven't even started gardening! I always have packages of President's Choice Udon Noodles on hand and shrimp in the freezer. Picked up beansprouts and cut some garlic chives from the garden. So, it was Spicy Noodles with Shrimp and Beansprouts. These noodles are so cheap (under $2.00 / package) and handy to keep on hand - no refrigeration required. Seasoned with oyster sauce and sweet chili sauce, the noodles are chewy and hold the sauces well. The sprouts and chives are thrown in for the last couple of minutes. I like to have fresh sprouts also with mine.

That looks terrific, especially the sprouts! We've been buying pea sprouts from the grocery store - grown in Saskatchewan. I find they've been too long in the stalks and not enough green. So, I've picked up packages of seeds and will now do my own sprouts. Grocery shelves seem to have just alfalfa. From our Sobeys sushi bar, I've been picking up avocado rolls and they are terrific! It's a reverse of how you use the lettuce and rice paper. They made a great lunch for my friends when I hosted a Garden Party.

Tucked fresh Kaffir lime leaves under the skin. Eaten with taters in foil and corn-on-the -cob. It's a chilly day, and the oven heat was most welcomed!

Had the leftover fritters as burgers wrapped in lettuce with sliced tomato and pickles. Great for quick supper as I was out on a shopping spree for plants! I dug out a blade roast from the back of the freezer and thawed it last night. Today, I cut it into big chunks intending for stew. But hubby wanted something curry, so out came Patak Vindaloo paste. Sauted the beef with chunks of onion, added curry paste, a handful of curry leaves ('cos I love the musty fragrance!), a cup of water, 2 cut-up tomatoes, and cooked it for 25 minutes on high in the Instant Pot. Thickened with cornstarch slurry and eaten with sticky rice and peas. It was perfect as temperatures have dropped again to single digits and we had turned off the furnace! Last night, it dropped to -7C.

A nice change-up from ground chicken burgers: Cheesy Chicken Fritters. Small dice 1.5 lbs chicken breast mixed with 2 eggs, 1/3 cup mayo, 1/3 cup flour, 4oz shredded mozz cheese, 1.5 tsp fresh dill, salt, pepper. Left to marinate overnight (or just a couple of hours). Make into fritters and fried in NON--STICK pan. Made some smaller ones for the Kidlets' small hands. Eaten with bottled Mango Chili sauce, corn-on-the-cob, and salad.

While rummaging around the freezer for ice-cream treats, I pulled up 2 packages of lamb chops purchased a few weeks ago at 50% off. Luckily, I had sealed them with Food Saver, so they were in good shape. Total of 6 thick chops onto the BBQ.

A final splurge on halibut today...$4.99 / 100g. Two fillets = $26.00. I was happy to spend my two $10.00 gift cards for the fish. Picked up corn and green beans as well. Smeared halibut with mayo then coated with chopped rosemary and Panko crumbs. Boiled corn, and steamed green beans then buttered and sprinkled on Parmesan. Started the fillets in frying pan then finished in the oven. Lovely crispy coating with moist and delicious fish inside!

Payback time for our neighbors who clear our big driveway every winter. Their daughter was visiting from out west. I heard her say "I LOVE WONTONS!": when I called, but I didn't know which ones she liked...wonton soup or deep fried wontons. So, I made both! Little "hats" for wonton soup and pouches for deep fry Char Siu Pork Char siu pork ribs and chicken wings Forgot to take picture of the deep fried wontons, but we did have a bowl of soup for OUR lunch...just to make sure it was seasoned properly, of course!

@Ann_T: Ah...mazing pizza! Tonight was a "cleaning out the bits and pieces in the fridge" kinda surf and turf: leftover piece of steak, a few shrimp, wayyy too many bell peppers, and avocado. Tossed everything together with fajita seasoning and an extra toss of cumin in the cast iron wok. Eaten with low-carb Protein-Up flatbread and guacamole.

A couple of meals lately: Zeroodles Rice with Oat bran - fried up with diced bell peppers, onion and Chinese sausage Cantonese Shrimp Egg Foo Young and Baked Chicken Wings First BBQ steak of the season, with Skillet Gnocchi (store bought), and stir-fried mixed bell peppers and corn-on-the-cob I've seen the skillet gnocchi ads and thought my little granddaughters would enjoy them. We all did!

Yes. I remember your advice on that, then also noticed on the package. Do they have to be refrigerated? I have 9 packages left and 4 of penne. I DO have them in my small condiments fridge at the moment.

Tried a new recipe tonight - Chicken Escabeche from Bon Appetit - Sept. 2017 It was great. Didn't have serrano pepper but I did have jalapeno. Don't like raisins, but I do like craisins. @ElsieD: My order for the Zeroodle Shirataki Rice with Oat Bran came today! I stir-fried some with egg and sesame oil, and it was good! What a nice change from cauliflower rice.

Roast pork loin with Italian seasoning. I love my home-made cranberry orange apple pecan chutney while hubby is a believer of commercial apple sauce.

Had some shrimp in the fridge that needed attention. Seasoned with salt, pepper, cornstarch and sauteed in hot pan. Finished with a grind of Habanero Lime spice. Cooled down with some salad stuff.;

Fish 2 nights in a row, but I changed it up last night, just for the "ha-la-but". Referenced Ann_T's recipe for Veal Piccata. Loved the taste, but I got too sloppy with the rou. Eaten with green beans and carrot fries. Tonight, we had a friend over for supper. She seldom cooks lamb shanks herself, so I had them for supper. I realized after that none of the shanks showed up under the blanket of coconut curry sauce, carrot, celery, and potato dumplings! Did the 6 shanks in the Instant Pot, but took Ann_T's advice and seared them first in a shallow pan.

On our last evening in Seoul, we ate at the hotel restaurant. It was seafood buffet night and everything was fabulous! One of the chafing dishes had okonomiyaki topped with ...maybe bonito flakes? Under the heat lamp, these flakes were moving - waving! Kinda freaked my si-i-l and me out! The server was quit amused when I took a picture, but it was delicious...
