    It was a busy weekend! Did an hour Drums Alive for Seniors demo / training to a couple of Fitness Instructors at our Y. Then in the afternoon,I helped our instructor guiding an elder gentleman recovering from a stroke on walking and light exercise at our aquacize class. He is hard of hearing, so I was pretty hoarse by the end of the day! So, supper was quick: Rice Omelet (cooked rice folded into beaten eggs) with a cheese sauce. Had 2 very active and constantly hungry granddaughters here yesterday. I got smarter and prepared a grazing board for them instead of lots of sweet. They were into that within 10 minutes in the door. Polished off pretty much all of it a couple of hours before supper Gave them supper early, Med-rare prime rib (per request), corn on the cob, and perogies. We ate when our son came up after work. What was left after we ate! Had cousin Ken and his wife Leslie visit us for lunch. They sold their rural property after a major health scare a couple of months ago. They are moving to London, Ontario end of the month, to be closer to their families. Leslie was my joong making partner. I will miss her! I made Fish Maw, Crab, and chicken soup. I had used chicken drumsticks to make the broth. Took out 6, and cooked them in the air fryer. These worked well with the Yaki Udon noodles I cooked. As well, I stir-fried shrim with tomato sauce, Ken's favourite. Forgot to take pictures, so this is what was left for supper for two tonight! Dessert was big navel oranges! They left mid-afternoon as they are staying at a cabin up by Gimli, on Lake Winnipeg, a 4 hour drive from here. Gimli is where I get our pickerel from!

    A few meals during this crazy spring - winter weather! Made a big pot of Beef Stew. Delivered 4 meals for 2 to a friend whose wife just passed. She was a talented friend who made a lot of pottery and jewelry. I will miss her very much. My brother had given us a couple of bags of King Crab claws. I haven't bought any lately as the price is outrageous. The claws are cooked, so he said to use them for salad as he found them spongy after steaming. I tried the oven method: thaw, brush with melted butter, and roasted for about 15 minutes in 375 oven, just to warm thru'. They were fine, but a lot of work for so little. LOL! I had some Snow Claw clusters and I enjoyed them more. I'll wait now until we can get to the source for fresh! Had picked up a couple of uncut chunks of beef liver a while back on sale at Safeway. Thawed, sliced, breaded and pan-fried with onions. Lovely with green peppercorn gravy Tomato theme for two meals! Shrimp in Tomato Sauce, and a plate of stir-fried been sprouts with lots of Jasmin rice. Beef, Tomato and Egg, again with lots of rice! Loaded bowl of Pho! I love the fresh crunch of the bean sprouts!

    It was +22 Celcius on our prairie city today! Did a lot of clean up in the flowerbeds, lawn, and garage. I was dusty, hot, and tired, so quick supper it was! Two traditional dishes: Joong (sticky rice in bamboo leaves) -made last fall and stockpiled in the freezer for days such as today. Nam Yu Lobak and Pork made by my sil Rebecca Choy. It's a dish my Mom used to make - a walk down memory lane! Lobak is Chinese daikon / radish. The meat and Lobak are braised in Nam Yu: "It's a preserved bean curd (tofu – made from soy beans), fermented in red rice, rice wine, salt and seasonings such as Chinese five spice, sesame oil or vinegar. It's a rather pungent condiment and definitely an acquired taste. But then it's not intended to be eaten on its own by the uninitiated." Simple stir-fried Shanghai Bok Choy go with.

    We love Pappardelle pasta, especially for stroganoff. So glad our local store now stocks these. I was ordering from Amazon before.

    @rotuts I cooked up the second Cottage Roll for supper tonight. Unfortunately, I didn't remember to take a pic before I simmered the roll. But I did after the 2 hour simmer with bay leaf and onion.I coated it with VH Mango Chili sauce as I was too lazy to make a glaze! It was lovely, tender, and not too salty. I cooked the Chinese cabbage and carrots in the broth and it was perfect salt-wise. Eaten with Jasmine rice and Cranberry Apple Orange Chutney that I made.

    Using up the leftover paella rice for Chicken Fajita Rice Bowls: Steamed Black Bean Garlic ribs and Mung Bean Noodles with Siu Choy and re-hydrated dried shrimp And FINALLY! Safeway / Sobeys have fresh halibut in. It's expensive but I splurged: $27.00 / lb. The tail pieces were slightly cheaper. The Scene points came in handy!

    I use a mix of flour, cornstarch. Add the chicken to beaten egg then into the flour mix. Then each piece is coated with cracker meal (soda crackers whizzed in a little blender)

    Found watercress at the store yesterday. I've been eating the tender tips in salad and to sub in for lettuce in sandwiches. Love the fresh crunch and the bite. With the larger stalks, I made Watercress soup with pork bones. Main was Seafood Paella and Taylor Farms Chopped Salad with addition of cukes and fresh blueberries.

    Have had this jar of Za'atar hiding in my pantry for some time. Rubbed it under the skin and on the skin of a spatchcock chicken with some stuffing underneath. Roasted in the oven, and the stuffing was great with all the juice and spices. We had some of the cranberry apple orange chutney that I made. A good friend has had a couple of falls, so I cooked supper for her and her husband. Made enough to feed the two of us as well. A favourite of theirs is Sesame Chicken. I obliged. Also did up some mixed vegetables with shrimp as well as Jasmine rice Just got our supply of pickerel today, so it was Fish'n'Chips day! As usual, we had curry gravy for the chips and malt vinegar for the fish.
  11. My favourite movie! Alan Clark, who is the piano player in the movie, did keyboard work on our last recording session in Newcastle, England, 1979. That was just before he was picked up by Mark Knopfler for the Dire Straits. Have you tried cooking to "Privateer"? Great for making seafood dishes;-)

    Didn't know what to have for supper until I saw the Kobacha Squash in the store. Stuffed it with ground beef sauteed with chopped onion, tomato, mushrooms, smoked paprika, cumin, tomato sauce. Topped with shredded cheese and Panko crumbs. Steamed green beans with Burbon Maple Balsamic . Using up the last lb of pickerel fillets before new shipment comes in on Sunday! Turmeric Coconut Curry FIsh, greens beans, and Basmati rice.

    Made Cock-a-Leekie soup with the leftover smoked turkey. But, the flavour was barely there, so I pulled out the ham bone from the freezer. Much better!

    Happy Easter, eGulleteers! Single rib prime roast, Yorkies, and mixed veg Chicken legs marinated in coconut milk, red Thai curry paste, lemongrass and Kefir lime leaves. Coated with cracker crumbs and cooked in the air fryer. Sweet potato, asparagus, and chopped salad Perfectly grilled med-rare lamb chops, cilantro - lime rice, corn, and more chopped salad.

    Our local meat packing plants had advertised smoked turkey, about 12 lbs, for $30.00 each. I picked one up, had them cut it into halves, and gave one half to our son and family. Reheated a few slices off the breast, and a wing in some chicken broth, covered with foil, at 350 in the oven with a sweet potato. I ate part of the wing - SO meaty! Brussel sprouts were by Michael Symon's recipe for Holiday Sprouts. I couldn't find fresh cranberries for my favourite Orange, Apple, Cranberry Chutney, so hubby had Mango Chili sauce. We enjoyed the turkey - not too salty or too smokey. Last night, a very traditional Toisanese meal: Wind-dried Salted Fish steamed with ground pork and lots of fresh ginger. My kids grew up eating this, but I don't think my grands would enjoy it. LOL! Beef and Bok Choy and lots of rice was needed!

    One of our Sobeys, the "super one" has a full service seafood and butcher department. BUT, when I called this morning, I got "No. We didn't get any halibut even tho' it's in the flyer. It is only for B.C. stores!' Grrrrr....I was so disappointed so I had indicated which province and store I was checking on the flyer. My gal said they DO have small frozen steaks, for more than the sale price this week, but I was not interested.

    @Ann_T:Your halibut always makes me envious and salivate! I see it's on the Sobeys flyer starting tomorrow: $5.99/ 100 grams. Just wondering what the price is for you, as it is from your coast. I will be biting the bullet tomorrow for some! Steamed Chicken, Shitaki Mushrooms and Chinese sausage: Had the granddaughters up for the day. Seems I always have to have a "buffet" when the two are here: one will like something, and the other one will not... I cooked back ribs in the oven, took a rack and sides to my brother and s-i-l, then we had the other for supper. The 11 year old granddaughter wanted perogies, ate 10 and tried and liked 1 rib and some beans. The 9 year old - no ribs, but would eat shrimp (6 jumbos) and Cavendish waffle fries. Hubby and I ate what was left;-) They seem like bottomless pits as they ate cinnamon buns, grazed on a small charcuterie board, more raw veg like carrots, cukes, broccoli, grapes, and Easter chocolates before supper!

    @Shelby: Sorry to hear you'll have to go thru' this second surgery. Hopefully, it will be successful, and you'll be very prepared mentally and food-wise. When my grandson had his jaw broken by a thief swinging a heavy bag of electronics at his head while working as a security guard at a Walmart, we put a lot of food thru' the blender for him, even turkey supper as it was Thanksgiving! What he enjoyed most was congee. I made a lot with homemade meat stock, meat diced fine, etc. Maybe you can do that for a couple of meals. For us these last couple of days: Beef Tenderloin Stroganoff and Pappardelle Breaded pickerel fillets, rice, broccoli, and chopped salad

    Went out to a favourite local diner for lunch with a friend: Komfort Kitchen. Breakfast and lunch is their specialty. Eggs Benedict is the Sat special, and I had my first today! It was very good! Might have to go again 😉

    Catch up with the meals: MaPo Tofu & Eggplant Pork Chop in Mushroom Sauce Spatchcock Chicken: Chicken was seared, then brushed with a mixture of soy sauce, mustard, honey, tomato paste, sweet paprika, fresh ginger, salt. Laid the chicken breast side up on a layer of sliced oranges. The whole thing was wrapped in foil and roasted at 350F for 50 minutes. Remove foil and roast for another 20 minutes. The juices, mixture all mingled with the orange slices = delicious! 2 meals to celebrate the Irish! Corned Beef & Cabbage, and Guinness Beef Stew. I found out the alcohol doesn't burn off in 2 hours with a lid on the casserole. I slept very well that night! Still had 2 whole dressed pickerel in the freezer. Deep fried one and served with Sweet & Sour sauce and bell peppers. Last night, it was deep fried tofu stuffed with ground pork, shrimp, shitaki mushrooms mix. Braised with oyster sauce and Romaine lettuce. Felt like A & W tonight: Teen Burger Lettuce wrap, fries, and onion rings, no picture, but I did make dessert: Cherry Galette with cherries I froze from last summer.

    WW recipe for Moussaka. Missed the Bechamel sauce, but it was still pretty good. Cavendish fries in the air fryer Black Bean Garlic Shrimp, Bitter Melon over rice noodles Tried a different lasagna recipe, using Ricotta cheese instead of cottage cheese. The filling was lean ground beef and spicy Italian sausage. Crab Cakes, asparagus, Cavendish fries, and field greens salad
