  12. we've had the spanish edition for a few weeks and it is really helpful, these guys did alot of research and it shows.... we love our immersion circulators, they are so accurate and save so much space, I would say 50 percent of our food is cooked sous vide

  15. we are using ln2 on a daily basis, we have been using it for about 6 months and now we can't live without it in the kitchen.......we have produced ice cream that is hot and cold at the same time using the ln2.......cold on the outside and hot on the inside.......we also are doing cocktails spheres that are liquid in the center and frozen on the outside........

  17. the ginger was grated and the juice was used to flavor the beef with a1......also I saw another table get the same treatment for their snapper dish... we did the tour in a little over 5 hours....... i have to admit.....I would've had trouble sitting there for 7.5 hours, or anywhere for that matter........ the bison dish was fun you could smell it all over the restaurant and the flavors were fantastic, the tube was glass I guess I don't need to post pics now...nice job yellow truffle seaninnashville

Moderator Note: For an in-depth look at Alinea's pre-opening development, please visit The Alinea Project forum. ====== We were the first table sat at Alinea on opening day......words can't describe what It's like to eat at this restaurant Alinea will change the way people look at restaurants forever.......I can't even imagine what this restaurant's future will hold, it is almost scary to think about A completely flawless meal on opening night with a 28 course format, very few people can pull that off..... it will be a very long time before a restaurant of this caliber surfaces anywhere in the world....... an amazing experience to say the least....alinea has raised the bar to unreachable heights!!!!!! the kitchen is amazing and the new plates and serviceware are really cool as well congratulations to chefg and the team at Alinea....I can't thank the entire staff enough for the mindbending experience and I am looking forward to my next meal (if I can get a reservation) I have pictures of every course and will post them soon>>>>>>>>>>>>>> seaninnashville

  21. breakfast at the old loveless cafe in nashvegas she crab soup anywhere in charleston chicken and dumplings at my grandmother's house with pone bread and fresh sliced tomatoes white castle's crispy chicken sandwich after a long and blurry night of honkytonkin on broadway the buffet at piggie park being a southerner is delicious
  22. we thought it was humorous as well......it was very noticable, i don't think anyone cared though......i thought it was cool that charlie said he can't wait to still grant's ideas...........
