  9. chef blais is taking great strides in the right direction and is kicking atlanta's ass))))))))))))
  10. the most groundbreaking restaurant in the country...............the coolest thing is the service along with the food....after having dinner at the best restaurants in the country....i found moto to be the most fun because the service was super laid back and dead on.........as good as daniel, jean georges, trio, gramercy tavern, .......and the servers were so down to earth with amazing knowledge of what they were serving and the everyone was so cool.........often when dining at the best restaurants i have felt a little uncomfortable because the servers were so uptight....if i recall correctly at one point the sommerlier poured a glass of wine and in his description he said" this is a killer wine".... enough said......i can't wait to go back.............they are doing everything right and it won't be long before everyone finds out what's going down..............before long getting a reservation at moto will make getting a reservation at the french laundry look easy......take my adviceand get a seat while you can))))))))))))))))))))))))))))))))))))))))))))))))))))))))))))))))))
  11. alway's ask your favorite local chef for those hard to find items.......we have the best connections and it is always alot less expensive....believe it or not complete strangers call me all the time for foie gras, morels, caviar, meyer lemons, truffles, etc........it makes it alot more fun))))))))))))))
  12. i consider myself an expert on the subject......first of all they have to smell really bad with terrible bathrooms, sleazy white trash bartenders and women's underwear hanging from the ceiling....and they must serve PBR in a can for 1 dollar....the bar is called big john's tavern in charleston, sc......:"charleston's best dive since 1965"......i think the last time they cleaned the bathroom was 1965.....my favorite place on earth........
  13. juice and reduce....then you can add butter, or olive oil, or creme anglaise, or cream, or red wine vinegar.....goes great with scallops

  19. believe it or not the 20 minute grits are amazing, and i think the crock pot would produce unbelievable grits..........you guys should try the fresh hominy.......it is a great source for corn flavor when corn isn't in season.........or try folding the hominy into your grits!!!! sean
  20. i fold mascarpone cheese in right at the last minute.........you can barely taste it and it makes them super creamy....... sean
  21. i have tried the grits from falls mills....they are very good.....the difference between anson mills and falls mills is how often they mill.....when i called falls mills they said they only mill three times a year......anson mills grinds them when you place the order, they mill every day..........i have also compared the two side by side many times.........the anson mills has an incredible aroma and the falls mills "falls" flat
