I make this around halloween (bubbling cauldron), but it is also good whenever, and a nice change from the spinach bowl.
Using a pumpernickle round bread, fill it with melted Velveta (with jalapenos if you want it extra spicy), about 2 lbs of black beans (fresh or canned), a small jar of salsa... and then bread cubes and pretzel rods can be used for dipping.
So, I guess it is really just a queso dip. But good none the less..
Also... those little pinwheel sandwiches. Put some cream cheese and ham, or turkey, etc (or jazz up the cream cheese even) on a tortilla, roll it up, and then slice into bite sized slices.
