Recent issues of Gourmet have contained more ads than food writing.

Well, so do most magazines. For example, GQ (or any other fashion magazine) is something like 75% ads and 25% content, if that.

It's disconcerting that this trend has found its way into most food magazines. But I'd rather see a blatant ad insert than to have content which is little more than product placement (like in Chile Pepper Magazine).

To my mind the only interesting food magazines for the non-professional are Saveur and Cooks Illustrated. On a loftier level Art Culinaire and the Art of Eating both make wonderful reading and there are great recipes in Art Culinaire. One can also get a lot of ideas from Food Arts.

Perhaps you're farther along the cooking curve than I am as I still find the recipes in Bon Appetit to be of interest. I have no interest in which restaurant is THE hot spot or what hotel they recommend when traveling or even who is making the latest greatest foam. Give me a recipe that will knock the socks off my family during the next holiday get together and I will be happy.

Brian: Peter, those are Cheerios.”

I finally got honest with myself and just subscribe to 'em all. I think I won't miss them and then end up paying full sticker price at the newsstand for all of 'em. But I am a bit annoyed by Boner Appetite. Think it's silly. That cartoonish Alton cooks a turkey piece could was interesting but could have been done in half the space. I'm a Saveur fan.
