Red Currant Meringue Cake
Ingredients
- 250 grams flour
- 80 grams sugar
- 1-2 eggs, or two yolks (used 3 yolks cause I had them)
- 1-2 tbsp milk
- 2 tsp baking powder
- 80 grams butter
- qs salt
- qs vanilla
- Topping
- 4-6 egg white, 100 gram (only took 3 whites from the eggs I had)
- 180 grams ground nuts
- 150 grams sugar
- small basket red currants , 500 grams
Method
1.Make shortbread with first ingredients - press in and up the sides of a 9 by 13 pan.

2.Beat whites until stiff, add sugar, fold in nuts and currants, pour over the crust and bake at 350 for 25 minutes.
