Red Currant Meringue Cake

Ingredients

 

  • 250 grams flour
  • 80 grams sugar
  • 1-2 eggs, or two yolks (used 3 yolks cause I had them)
  • 1-2 tbsp milk
  • 2 tsp baking powder
  • 80 grams butter
  • qs salt
  • qs vanilla
  • Topping
  • 4-6 egg white, 100 gram (only took 3 whites from the eggs I had)
  • 180 grams ground nuts
  • 150 grams sugar
  • small basket red currants , 500 grams

 

Method

 

1.Make shortbread with first ingredients - press in and up the sides of a 9 by 13 pan.
 
2.Beat whites until stiff, add sugar, fold in nuts and currants, pour over the crust and bake at 350 for 25 minutes.
